Tips:

  • Use day-old rice. This will help the rice fry up nice and separate, without getting mushy.
  • Chop your vegetables into small pieces. This will help them cook evenly and quickly.
  • Use a well-seasoned wok or large skillet. This will help prevent the rice from sticking and burning.
  • Cook the rice over high heat. This will help it stay fluffy and prevent it from getting mushy.
  • Add the eggs and vegetables to the wok or skillet first. This will give them a chance to cook before the rice is added.
  • Stir the rice constantly. This will help prevent it from clumping together.
  • Season the rice to taste. You can add soy sauce, salt, pepper, or other seasonings to taste.
  • Serve the rice immediately. It's best when it's hot and fresh.
