Chicken simmered with celery, onion, mushrooms and soy sauce. This is a quick meal my kids have always called 'popcorn' chicken. Serve with rice, if desired.

QUICK CHICK TRICK

Number Of Ingredients 5

4 boneless chicken breasts or 1 whole chicken
1 can cream of chicken soup
8 ounces sour cream
40 Ritz crackers, crushed
1 stick margarine, melted

Steps:

  • Boil and debone chicken; tear into small pieces and line bottom of baking dish. Mix together soup and sour cream. Pour over chicken. Put cracker crumbs on top; pour melted margarine over crumbs. Bake 30 minutes at 350° until bubbly. May be reheated in microwave. Even Easier: Use canned chicken or chicken you have cooked earlier and frozen. My favorite "chicken thing" is to buy boneless, skinless chicken tenders, then boil or stir-fry in minutes! Or buy fully cooked, ready-to-eat roasted chicken-you can also use the carcass for making broth.

Tips:

  • Choosing the Right Chicken: Opt for air-chilled or pasture-raised chicken for better flavor and texture.
  • Thawing Safely: Thaw frozen chicken in the refrigerator or using the cold water method. Never thaw at room temperature.
  • Seasoning for Maximum Flavor: Use a combination of salt, pepper, and your favorite herbs or spices. Marinating the chicken enhances the flavors.
  • Cooking to Perfection: For juicy and tender chicken, cook it to an internal temperature of 165°F (74°C). Avoid overcooking to prevent dryness.
  • Crispy Skin: Pat the chicken dry before cooking to achieve crispy skin. You can also use a dry rub or a mixture of oil and herbs.
  • Resting Before Serving: Let the cooked chicken rest for a few minutes before slicing or serving. This allows the juices to redistribute, resulting in a more flavorful and moist dish.

Conclusion:

With careful preparation and cooking techniques, you can create delicious and versatile chicken dishes that are sure to impress. Remember to follow these tips for choosing, seasoning, and cooking chicken to achieve the best results. Experiment with different recipes and cooking methods to find your favorite ways to enjoy this versatile protein. Whether you prefer grilled, roasted, fried, or baked chicken, the possibilities are endless.
