EASY CHOCOLATE BROWNIES

Recipe video above. These are my "go to" brownies, the one I have been making for years that's super easy and outrageously chocolatey. The best fudgey chocolatey brownies made without fuss, in one bowl in 10 minutes. These are not the cakey kind, they're soft fudgey kind. Super rich and moist!

Time 35m

Number Of Ingredients 10

200g / 14 tbsp unsalted butter ((1 3/4 US sticks))
200 g / 1 1/4 cups dark chocolate chips ((7 oz) (Note 1))
1 cup (175g) brown sugar (, loosely packed )
3 eggs (, lightly beaten)
1 tsp vanilla extract
1/2 cup (75g) plain flour
1/4 cup (30g) cocoa powder
Pinch of salt
180g/6oz dark chocolate block/bar (optional)
1.5 cups roughly chopped walnuts (or other nuts)

Steps:

  • Preheat oven to 180°C/350°F (160°C fan forced).
  • Spray a 20cm/8" square tin with oil and line with baking/parchment paper with overhang (Note 2).
  • Place butter and chocolate chips in a heatproof bowl, microwave in 30 second bursts (takes me 1m 30 sec) until melted. Stir until smooth.
  • Add sugar and vanilla, mix, then add eggs and mix well until smooth and molten.
  • Add flour, cocoa and salt and stir until smooth. Stir in chopped chocolate, pour into pan.
  • Bake 24 minutes for really gooey in the centre, 28 minutes for fudgey but still very moist (my favourie, shown in video & photos), 32 minutes for moist fudge-cake-like. (See in post for toothpick testphotos).
  • If you didn't use the extra chocolate for stirring in, reduce cook time by 2 minutes.
  • Rest for 10 minutes before lifting out of the pan. Allow to cool for at least 20 minutes before cutting. Store in an airtight container for 4 days (bet they don't last that long!) or freeze for 3 months.

Yield Makes 16

Number Of Ingredients 8

1 cup hot chocolate drink mix
1 cup all purpose flour
3/4 cup sugar
1 teaspoon baking powder
2 eggs, beaten to blend
6 tablespoons (3/4 stick) unsalted butter, melted
1 teaspoon vanilla extract
6 ounces semisweet chocolate chips

Steps:

  • Preheat oven to 350°F. Generously butter 8-inch square baking pan. Combine first 4 ingredients in medium bowl and stir until well blended. Mix in eggs, butter and vanilla. Mix in chocolate chips. Spread batter in prepared pan.
  • Bake brownies until tester inserted into center comes out with a few moist crumbs attached, about 30 minutes. Cool brownies in pan before serving.

Tips:

  • Accurate Measurements: Use a kitchen scale for precise measurements of ingredients, especially dry ingredients like flour and cocoa powder, to ensure consistent results.
  • Quality Ingredients: Choose high-quality cocoa powder and chocolate chips for a richer, more flavorful brownie. Using good-quality ingredients will make your brownies taste better.
  • Don't Overmix: Mix the brownie batter just until the ingredients are combined. Overmixing will develop the gluten in the flour, resulting in a tough, chewy brownie.
  • Proper Baking: Bake the brownies in a preheated oven for the specified time. Underbaking will result in gooey brownies, while overbaking will make them dry and crumbly.
  • Cooling and Cutting: Allow the brownies to cool completely before cutting them. This will help them hold their shape and prevent them from crumbling.
