QUICK BREAD MIX

Quick Bread Mix image

Bulk mix suitable for quick breads and/or muffins. These are great baked in mini pans for an assortment on trays for gifts. I also bake a lot for fall bake sales. Three cups of mix makes one large or two medium loaves. Add 1 cup pureed cooked vegetable or fruit such as pumpkin, winter squash, carrots, apricots, applesauce, mashed banana along with whatever nuts, fruits or flavorings you desire.

Time 1h10m

Yield 1 loaf, 16 serving(s)

Number Of Ingredients 15

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg (I use fresh grated, but ground is fine)
1/4 teaspoon ground ginger
1/2 cup dried cranberries
1/2 cup white chocolate chips
1/2 cup pecans, chopped
2 eggs
1/2 cup sour cream
1/4 cup butter, melted
1/4 cup powdered sugar
1/2 tablespoon milk

Steps:

  • To make the gift jar: Sift together the flour, baking powder and salt and then spoon into a quart-sized jar with a tight-fitting lid. (I use a wide-mouth funnel to easily get the ingredients into the jar.) Tap the jar gently on the counter top to settle the flour.
  • Combine the sugar, cinnamon, nutmeg and ginger and pour over the flour in the jar.
  • Continue the layers with the dried cranberries, then the white chocolate chips and finally the pecans. Put the lid on the jar and decorate as desired.
  • To make bread: Preheat oven to 350°F and lightly grease a 9x 5 loaf pan.
  • Pour all the dry ingredient from the jar into a large mixing bowl and stir to combine.
  • In a small bowl, use a fork to beat the eggs lightly and then add the sour cream. Continue mixing with the fork until the sour cream is incorporated.
  • Add the melted butter to the dry ingredients and then add the egg and sour cream mixture. Stir just until combined.
  • Spread into prepared loaf pan and bake in preheated oven for 50 minutes, or until toothpick inserted near center comes out clean.
  • Cool 10 minutes in pan and then turn out onto a cooling rack (with a layer of foil or waxed paper under the rack, to keep your counter clean.).
  • Stir together powdered sugar and milk until smooth. Drizzle or spread over top of loaf. Serve immediately or cool completely before slicing, to keep the slices looking nice.

Time 2h

Yield 16

Number Of Ingredients 9

1 tablespoon cider vinegar
3 tablespoons milk
½ cup butter, softened
1 cup white sugar
3 ripe bananas, sliced
2 cups all-purpose flour
2 teaspoons baking soda
1 cup chopped walnuts
2 eggs, beaten

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Grease two 4x8-inch loaf pans.
  • Mix the cider vinegar and milk together in a small bowl; set aside. Cream together the butter and sugar in a large bowl with an electric mixer. Beat in the sliced bananas until well incorporated, then stir in the milk mixture. Mix in the flour and baking soda until just combined, then mix in the walnuts and eggs until evenly distributed. Divide the batter evenly between the two prepared pans. Place the pans on a baking sheet for easier handling.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack. Wrap in plastic wrap and store in refrigerator.

Tips:

  • Choose your flour wisely: Different flours will yield different results. All-purpose flour is a good option for a basic quick bread, while whole wheat flour or oat flour can add a nutty flavor and extra fiber. You could also use gluten-free flour if you have a gluten intolerance.
  • Don't overmix the batter: Overmixing can result in a tough, dense loaf of bread. Mix the batter just until the ingredients are combined.
  • Let the batter rest: Letting the batter rest gives the flour time to absorb the liquid and the gluten time to develop. This will result in a more tender, flavorful loaf of bread.
  • Use fresh baking powder: Baking powder is what makes your bread rise. If your baking powder is old, it may not be as effective and your bread may not rise properly.
  • Don't open the oven door during baking: Opening the oven door during baking can cause the bread to fall. Resist the urge to peek!

Conclusion:

Quick breads are a delicious and easy way to enjoy fresh, homemade bread. With a few simple ingredients and a little bit of time, you can have a loaf of quick bread ready to eat in no time. So next time you're craving something sweet or savory, give one of these quick bread recipes a try.
