Categories     Soup/Stew     Bean     Dinner

Yield 4

Number Of Ingredients 12

2 teaspoons olive oil
1 medium red onion, finely chopped
3 garlic cloves, minced
3 cups cooked or 2 (15.5-ounce) cans black beans, drained and rinsed
1 (14.5-ounce) can diced tomatoes with chiles, undrained
1 teaspoon ground cumin
1/2 teaspoon ground coriander
3 cups vegetable broth
Salt and black pepper
1 fresh ripe mango, peeled, pitted and chopped
3 tablespoons minced fresh cilantro
1 tablespoon fresh lime juice

Steps:

  • -Heat the oil in a large pot over medium heat. Add all but 2 tablespoons of the onion and cook until softened, about 5 minutes. Add the garlic and cook 1 minute longer. Stir in the beans, tomatoes, cumin, coriander, vegetable broth, and salt and pepper to taste. Bring to a boil, then reduce heat to medium and simmer until the flavors are blended, about 15 minutes. -While the soup is simmering combine the reserved 2 tablespoons onion in a bowl with the mango, cilantro, and lime juice. Mix well and set aside. -When ready to serve, ladle the soup into bowls and top with a spoonful of the salsa.

Tips:

  • Select high-quality ingredients: Use fresh, ripe tomatoes, juicy limes, and flavorful cilantro for the best salsa. Choose canned black beans that are low in sodium or rinse them thoroughly before using.
  • Chop ingredients evenly: This ensures that the salsa has a consistent texture and that all the flavors are evenly distributed.
  • Don't over-process the salsa: A chunky salsa has more texture and flavor than a smooth one. Use a sharp knife to chop the ingredients or pulse them in a food processor just a few times.
  • Let the salsa rest: This allows the flavors to meld and develop. Cover the salsa and refrigerate it for at least 30 minutes before serving.
  • Serve with your favorite accompaniments: Black bean salsa is delicious with tortilla chips, grilled chicken or fish, tacos, burritos, and more.

Conclusion:

This quick and easy black bean salsa is a delicious and versatile recipe that can be used in a variety of dishes. With its fresh, flavorful ingredients and simple preparation, it's a perfect addition to any party or potluck. Whether you're serving it with tortilla chips, grilled meats, or as a topping for tacos or burritos, this salsa is sure to be a hit.
