2 tablespoons soy sauce
1/2 teaspoon grated fresh ginger or 1/4 teaspoon ground ginger
2 tablespoons vegetable oil
1 lb broccoli, chopped to bite sized florets
1 1/2 teaspoons cornstarch
1/2 cup beef broth
1 teaspoon soy sauce
1/4 teaspoon sesame oil

Steps:

  • Put meat in a bowl with 2 Tbs soy sauce and ginger mix well.
  • Heat your wok or frying pan to very hot.
  • Add oil and coat the sides well.

1 pound flank steak, trimmed of fat and sliced very thin against the grain
3 tablespoons peanut or olive oil
1 pound broccoli florets
1/4 cup beef broth
1/4 cup oyster sauce
Salt as needed (use sparingly)
Chow Mein, for serving

Steps:

  • In a bowl, mix together the soy sauce, cornstarch, sherry, brown sugar, ginger and garlic. Pour half the liquid over the sliced meat in a bowl and toss with your hands. Reserve the other half of the liquid and set aside.
  • Heat the oil in a heavy skillet (iron is best) or wok over high heat. Add the broccoli and stir for a minute. Remove to a plate.
  • Allow the skillet to get very hot again. With tongs, add the meat in a single layer. Spread out the meat as you add it to skillet, but do not stir for a good minute. 2 teaspoons Asian (toasted) sesame oil
⅓ cup sherry
1 teaspoon soy sauce

¾ pound beef round steak, cut into 1/8-inch thick strips
3 tablespoons vegetable oil, plus more if needed
1 thin slice of fresh ginger root
1 clove garlic, peeled and smashed
1 pound broccoli, cut into florets

  • Whisk together the oyster sauce, sesame oil, sherry, soy sauce, sugar, and cornstarch in a bowl, and stir until the sugar has dissolved. 1 small onion, cut into wedges
