Meat Buns - Hearty, perfectly seasoned beef wrapped in a fluffy bun? It's tough to go wrong with bread stuffed with meat, and this recipe allows you to experience these flavors together in perfect harmony.

Number Of Ingredients 17

1 lb beef
1 small onion
2 Tbsp olive oil
1 tsp thyme
Salt to taste
1 tsp Bouillon powder
Red chili flakes (to taste)
2 carrots
2 green onions
½ cup water + 2 tbsp water (slurry)
2½ cups flour (plus 1 to 2 tbsp for kneading)
2 Tbsp butter (melted )
½ tbsp yeast
1 egg
¾ cup Milk (warm )
3 tbsp Sugar (Use 1 Tsp for proofing the Yeast)
½ tsp Salt

Steps:

  • While the dough is resting, heat the oil in a pan, add the diced onion, and cook till soft-about 5 minutes.
  • Add the beef and break it up.
  • Add the thyme, red chili flakes, grated carrots, green onions. Bouillon powder, salt, and pepper to taste.
  • Cook till there's little to no more water in the meat
  • Add the slurry and leave to simmer for a few more minutes. Remove from heat and leave to cool.
  • Dissolve the Yeast and Sugar in the warm milk and leave to proof.
  • In a large bowl, combine the flour, salt, and sugar, make a well at the center and add the proofed yeast, egg, and butter and mix together until a soft dough is formed.
  • Transfer the dough to a lightly floured surface and knead until it's smooth and elastic, about 7 minutes by hand.
  • Place the dough inside a very large oiled bowl (making sure you smear some oil on the surface of the dough) and leave to rise in a warm place for 1 hour or till doubled in size.
  • Punch down the dough to remove the trapped air and place the dough on a lightly floured work surface.
  • Divide the dough into 6 equal parts and mold each of them into a ball.
  • Take the dough one at a time and roll them out into a circular disc. Scoop the filling inside the center of the dough and gather the dough at the top. Then, pinch the top a couple of times to securely close the dough.
  • Place seam side down on a parchment-lined baking sheet. Cover and let rise in a warm place until doubled, about 30 minutes.
  • Brush with egg wash and bake at 350° for 20 minutes or until golden brown. Serve warm.

DOUGH:
1-1/2 teaspoons active dry yeast
1/2 cup plus 1 tablespoon warm water (110° to 115°)
3 tablespoons sugar
1 large egg
1/2 teaspoon salt
2 to 2-1/4 cups bread flour
FILLING:
1 pound ground beef
1-1/2 cups chopped cabbage
1/2 cup chopped onion
Salt and pepper to taste
1/2 cup shredded cheddar cheese
2 tablespoons butter, melted

Steps:

  • In a large bowl, dissolve yeast in water. Add sugar, egg, salt and 1 cup flour; beat on low for 3 minutes. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Add cabbage, onion, salt and pepper. Cover and cook over medium heat for 15 minutes or until vegetables are tender. Stir in cheese. Remove from the heat; set aside to cool. , Punch dough down and divide into 12 pieces. Gently roll out each piece into a 5-in. circle. Top each with about 1/4 cup filling. One of my husband's favorites! My sister gave me the recipe many years ago. Not gourmet by any stretch of the imagination but definately good food!

3/4 lb ground beef
2 tablespoons green peppers
2 tablespoons minced dried onion
1/2 cup breadcrumbs
1/4 cup barbecue sauce
1 teaspoon salt
8 ounces crescent roll dough
mozzarella cheese
1 egg yolk

Steps:

  • Cook beef, pepper & onion in skillet over med. heat until brown. Remove from heat and stir in bread crumbs, barbecue sauce and salt. Set aside.
  • Preheat oven to 375º. Separate crescent roll dough in 4 rectangles on lightly floured board. Roll dough in 8x4 rectangle-cut crosswise in half. Place 2 tbsp of meat mixture on each half. Top with some mozzarella. Pull corners of dough toward the center and twist. Pinch to seal. Place buns on greased cookie sheet. Repeat with rest. Makes 8 buns.
  • In small cup, beat egg yolk and 1 tsp water with fork until blended. Brush top of buns.
  • Bake 10-15 minutes or until golden.

By using this technique, we can transform those cheaper cuts of beef into something absolutely gorgeous. Serve on buns with mayonnaise, pickle slices, and a drizzle of barbecue sauce.

2 teaspoons kosher salt
1 ½ teaspoons white sugar
1 ½ teaspoons freshly ground black pepper
½ teaspoon cayenne pepper
1 ½ pounds boneless top round steak
2 tablespoons barbecue sauce
2 tablespoons apple cider vinegar
2 teaspoons Dijon mustard
⅛ teaspoon ground turmeric
3 cloves garlic, minced
6 (2 ounce) hamburger buns, split

Steps:

  • Mix salt, sugar, pepper, and cayenne for dry rub together and coat beef well on both sides.
  • Place on a rack set on a sheet pan and refrigerate, uncovered, for 12 to 24 hours, flipping over halfway through.
  • Mix barbecue sauce, vinegar, mustard, turmeric, and garlic together for wet rub and reserve.
  • Transfer beef to a dish and pour 1/2 of the wet rub over top. Use two forks to poke the surface all over for about 1 minute. Turn beef over and repeat with remaining wet rub. Spoon any excess on the bottom over the top.
  • Cover and refrigerate for 4 to 12 hours.
  • Preheat a charcoal grill until the briquettes turn white and ashy. Remove meat from the refrigerator, uncover, and scrape off excess wet rub.
  • Grill over hot charcoal until blackened and an instant-read thermometer inserted into the center of the meat reads 120 to 125 degrees F (49 to 52 degrees C), 7 to 10 minutes per side, or to desired doneness. Remove to a foil-lined plate, and quickly wrap up tightly in foil.
  • Let rest for at least 15 minutes, during which time the meat will finish cooking, and end up close to medium-rare.
  • Slice very thinly, toss in the meat drippings and juices left in the foil, and serve on buns.

These are super easy, super quick buns. I get requests to take them everywhere we go. They are great for those last minute dinner guests, or a nice surprise for breakfast. They freeze well, and make excellent toast. This recipe is a combo of my grandmothers recipe and a few others, all tweaked to make a fast, easy, soft, fluffy bun.

4 1/2 cups flour
4 1/2 teaspoons dry yeast (2 8g packages)
1 cup milk
3/4 cup water
1/2 cup butter or 1/2 cup oil
1/3-1/2 cup white sugar
1/2 teaspoon salt

Steps:

  • Mix 2 C flour& yeast in a large bowl.
  • In a separate bowl, heat milk, water, oil, sugar& salt to lukewarm in microwave.
  • Add all at once to flour mixture and beat till smooth. (Approx 2 mins in a Kitchenaid stand mixer).
  • Mix in enough flour to make a soft dough (2 - 2 1/2 Cups).
