1 cup sugar, divided
2 teaspoons ground cinnamon
1 cup all-purpose flour
1 teaspoon baking powder

VANILLA SAUCE:
1 cup sugar
2 tablespoons cornstarch
1/2 teaspoon salt
2 cups cold water
2 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Arrange apples in a greased 13x9-in. baking dish. Combine 1/2 cup sugar and cinnamon; set aside 1 tablespoon. Sprinkle remaining cinnamon-sugar over apples. , In a small bowl, combine the flour, baking powder and remaining sugar; beat in the milk and butter until blended. Drop by tablespoonfuls over apples; sprinkle with reserved cinnamon-sugar. Bake at 350° for 35-40 minutes or until golden brown. Remove to a wire rack., Meanwhile, in a saucepan, combine the sugar, cornstarch, salt and water until smooth. Bring to a boil over medium heat. While we were stationed in Germany our land lady used to make the most fantastic apple cake. So I decided to come up with my own recipe for fresh apple cake and I hit the jack pot. I have been making it ever since, it is so simple you can do it with your eyes closed.

4 c granny smith apples coarsley sliced
1 1/2 c canola oil
2 c sugar
3 large eggs
3 c flour
2 tsp baking soda
1 tsp salt
1 tsp vanilla
nutmeg sprinkle on top

Steps:

  • 1. Preheat oven at 375* Lightly grease and flour 9 inch baking pan.
  • 2. In bowl cream Oil, sugar, and eggs, beat after each addition. Add flour and baking soda, and salt, add vanilla, you can add the apples to the mix or spread apples on top and press apples into mixture. I prefer the apples on top, sprinkle with nutmeg on top.
  • 3. The mixture will be thick in consistency. Place in oven and bake for 1 - 1 1/2 hour. Till knife inserted comes out clean. Let cool on cake rack, serve with powder sugar sprinkled on top. Great warm or cold
