EASY SPICY CHICKEN RICE SOUP
I got this recipe about three years ago from the back of a can of tomatoes (Delmonte, I think), and it's been a hit with my husband -- who isn't a soup fan generally. It's a very easy but good comforting winter soup that also freezes well. Also easy to double recipe.

Tips:
- Use day-old rice: Day-old rice is less sticky and will hold its shape better in the soup.
- Toast the spices: Toasting the spices in a little oil before adding them to the soup will bring out their flavor.
- Use a variety of vegetables: This recipe calls for carrots, celery, and onion, but you can use any vegetables you like. Some other good options include broccoli, cauliflower, and spinach.
- Add some protein: This recipe uses chicken, but you can also use beef, pork, or tofu. If you're using tofu, be sure to press it well before adding it to the soup.
- Season to taste: Be sure to taste the soup and adjust the seasonings as needed. You may want to add more salt, pepper, or garlic powder.
Conclusion:
This quick and spicy chicken rice soup is a delicious and easy meal that's perfect for a weeknight dinner. It's also a great way to use up leftover rice and vegetables. So next time you're looking for a quick and easy meal, give this recipe a try!
