3 cups frozen corn, thawed
1 can (15 ounces) black beans, rinsed and drained
5 green onions, thinly sliced
1 medium sweet red pepper, finely chopped
1 jalapeno pepper, finely chopped
1/3 cup rice vinegar
1 tablespoon olive oil
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 to 1/2 teaspoon hot pepper sauce
1/4 teaspoon pepper
Dash cayenne pepper
2/3 cup minced fresh cilantro

Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, whisk the vinegar, oil, mustard, salt, pepper sauce, pepper and cayenne. Stir in cilantro. Drizzle over corn mixture and toss to coat., Chill until serving. Serve with your favorite snack chips or grilled meats.

After watching my classmates tip the bowl, I decided it was worth posting. While the ingredients are familiar, the ratio of tomatoes, beans and corn is quite different from the dozens already here. So easy, its a crowd pleaser.

1 (14 1/2 ounce) can diced tomatoes
1 jalapeno, finely diced
1/2 red onion, finely diced
2 tablespoons lime juice, about 1 lime
1/2 teaspoon cumin
2 -3 tablespoons cilantro, finely chopped
1/2 cup canned black beans, drained and rinsed
1/2 cup frozen corn

Steps:

  • In a medium bowl mix together the tomatoes, onions, jalapeƱo, onion, lime juice, cumin and cilantro, beans and corn.
  • Refrigerate at least an hour and adjust seasonings to taste.
  • Serve with chips or vegetables or whatever pleases you.

1 (14 ounce) can diced tomatoes with juice
1 (10 3/4 ounce) can tomato soup, undiluted

Steps:

  • In a large saucepan, cook the ground beef with onion, garlic, jalapeno and green pepper (if using) .
