This is the simplest recipe for pea salad. My mom use to make this for us when we were growing up, now I make it for my family and everyone enjoys it. 1/2 teaspoon chopped of fresh mint (I omit the mint, but that's up to you)
1 (15 7/8 ounce) can black-eyed peas (rinsed and drained)
2 garlic cloves, minced
