1 onion
2 carrots
2 celery stalks
1 red pepper
5 cups stock/broth (either vegetable, chicken or beef )
2 tbsp tomato puree
1/2 tsp salt
1/8 tsp ground black pepper
1 tsp dried thyme
1 tbsp chopped fresh parsley
