Time 15m

Number Of Ingredients 15

3/4 cup granulated sugar
1/2 cup apple cider vinegar
1/4 cup ketchup
2 tablespoons low-sodium soy sauce
1 tablespoon sesame oil
1 tablespoon light brown sugar, packed
3 cloves garlic, pressed or finely minced
2 tablespoons cold water
1 tablespoon cornstarch
about 1.25 pounds boneless skinless chicken breasts, cut into 1-inch pieces
3 tablespoons cornstarch
salt and pepper, to taste
3 to 4 tablespoons olive oil, plus more if necessary
2 green onions, sliced into thin rounds, optional for garnishing
1 tablespoon sesame seeds, optional for garnishing

Steps:

  • To a medium saucepan, add all ingredients except water and cornstarch, whisk to combine, and bring to a boil over medium-high heat.
  • To a small bowl, add the water, cornstarch, and stir to combine.
  • Add the water and cornstarch mixture to saucepan, reduce heat to low, and allow sauce to simmer for about 5 minutes while you make the chicken; whisk intermittently.
  • To a large ziptop bag, add the chicken, cornstarch, salt and pepper to taste, seal, and shake to coat chicken evenly.
  • To a large skillet, add 3 to 4 tablespoons olive oil, chicken, and cook over medium-high heat for about 5 to 7 minutes, or until chicken has cooked through. Stir and flip intermittently to ensure even cooking. If skillet seems dry while cooking, add an additional tablespoon or two of oil as necessary.
  • After chicken has cooked though, reduce heat to low, add the sauce, stir to coat evenly, and allow it to simmer for a minute or two.
  • Optionally garnish with green onions, sesame seeds, and serve immediately.

SWEET AND SOUR SESAME CHICKEN

Sweet and Sour Sesame Chicken image

Sweet and sour chicken is deep-fried breaded white meat chicken, coated or served with sweet and sour sauce. This recipe isn't exactly a 30-minute meal - it takes a little bit of time and preparation, but if you have a few extra minutes, this sesame chicken is 100% worth it. I love how crunchy the chicken is and that the sauce thickens beautifully to coat the chicken. It's not too thin, but not gloopy either; just right. Toss the chicken on a bed of white rice and top with toasted sesame seeds and chopped scallions, and you'll be in dinner heaven. Time 35m

Yield 2 serving(s)

Number Of Ingredients 16

10 ounces raw boneless skinless chicken breasts, cut into nuggets
1/8 teaspoon salt
1/8 teaspoon black pepper
1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
1/4 cup whole wheat flour
1/4 cup fat-free chicken broth
1 tablespoon cornstarch
2 tablespoons sugar-free pancake syrup
2 tablespoons seasoned rice vinegar
1 tablespoon ketchup
1/2 tablespoon reduced sodium soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon crushed garlic
1 teaspoon sesame seeds
2 tablespoons thinly sliced scallions
red pepper flakes (optional)

Steps:

  • Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.
  • Place chicken in a large bowl and season with salt and pepper. Top with egg substitute and toss to coat.
  • Put flour in wide bowl. One at a time, shake nuggets to remove excess egg and coat with flour. Evenly lay on the baking sheet. Bake for 10 minutes, or until chicken is cooked through.
  • To make the sauce, combine broth with cornstarch in a nonstick skillet; whisk to dissolve. Set heat to medium low. Add syrup, vinegar, ketchup, soy sauce, sesame oil, and garlic. Mix well. Cook and stir until thick enough to coat a spoon, 2 - 3 minutes.
  • Remove skillet from heat. Add chicken and toss to coat.
  • Plate and sprinkle with sesame seeds and scallions. If you like, add a sprinkle of red pepper flakes. Eat up!

Tips:

  • Use a good quality soy sauce. This will make a big difference in the flavor of the dish.
  • Don't be afraid to adjust the amount of sweetener to your liking. If you like your food sweeter, add more sweetener. If you prefer it less sweet, use less.
  • Be careful not to overcook the chicken. Otherwise, it will become tough and chewy.
  • Serve the chicken immediately over rice or cauliflower rice.

Conclusion:

This keto sweet and sour sesame chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great option for meal prep, as it can be stored in the refrigerator for up to 3 days.
