Number Of Ingredients 10

3 cups corn kernels (see Cook's Note)
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
Kosher salt and freshly ground black pepper
2 large eggs, lightly beaten
3/4 cup heavy cream
Vegetable oil, for frying
Sliced scallions, for serving
Sour cream or aioli, for serving

  • Stir together the corn kernels, flour, sugar, baking powder, 1/2 teaspoon salt and 1/4 teaspoon pepper in a large bowl. Stir in the eggs and heavy cream until the batter is well combined.

Once the oil is hot, scoop 2- to 3-tablespoon mounds of the corn batter into the pan, spreading it lightly into a flat, circular shape. Cook the fritters until golden brown, 2 to 3 minutes, then flip and cook until golden brown and cooked through, about 3 minutes. CORN FRITTERS

These easy Corn Fritters made from fresh sweet corn take only 25 minutes to cook from scratch. Make these as an appetizer or for an afternoon snack!

Provided by Kate

Categories     Appetizer     Lunch

Time 25m

Number Of Ingredients 8

3 cups corn kernels ((thawed, if using frozen, or 2 cans of corn, or 3 large ears of corn if using fresh))
1 jalapeño (seeds removed and finely diced (optional, skip this if you don't want any spice))
2 eggs
1 cup white whole wheat flour ((or all purpose flour))
2 tablespoons cilantro leaves (diced (or use any herb you like))
½ teaspoon salt (or more to taste)
2-4 tablespoons Olive oil for frying
Optional: Lime juice and extra cilantro for serving

Steps:

  • Mash the corn kernels in a large bowl using a potato masher or a mojito muddler until most corn kernels are broken and some juice comes out. You can also pulse the corn in a food processor for a few seconds just to break them - be careful not to over-process and turn them into creamed corn.
  • Add the rest of the ingredients (jalapeno through salt) and mix well. I just used the same mojito muddler for mixing everything together - no need to get a whisk or another utensil dirty!
  • Heat 1-2 tablespoons of olive oil in a pan. Use a heaping tablespoon or a melon baller to add the corn batter to the pan. Cook for about 3 minutes over medium heat, or until golden brown. Carefully flip and cook for another 3 minutes, or until the corn fritters are golden brown and cooked through.Serve with some fresh cilantro and a squeeze of lime juice.

EASY CORN FRITTERS

Easy Corn Fritters image

I haven't had these corn fritters in years, and made my mom's recipe tonight. They are super easy and really tasty. They basically taste like pancakes with corn in them. I think they would be a great way to sneak some veggies into your pickier eaters diet.

Provided by karen

Categories     Corn

Time 20m

Yield 15 patties, 5 serving(s)

Number Of Ingredients 9

2 cups corn (frozen)
1 egg, well beaten
1 teaspoon sugar
1/2 teaspoon salt
1 tablespoon butter, melted
2 teaspoons baking powder
1 cup flour
2/3 cup milk
1 tablespoon canola oil (more may be added to additional batches, but is not necessary)

Steps:

  • Thaw frozen corn by placing it in a strainer in the sink and run cold water over it, stirring occasionally, until it is completely thawed.
  • While corn is thawing, mix all of the remaining ingredients except oil in a large bowl.
  • Add thawed corn to batter and mix well.
  • Heat oil in a large non-stick skillet on medium-high.
  • Drop spoonfuls of batter into skillet. Brown on both sides.
  • Drain on paper towels before serving.

Tips:

  • To achieve crispy fritters, ensure the oil is hot enough before frying. A good indication is when a drop of batter sizzles upon contact with the oil.
  • For a gluten-free option, substitute all-purpose flour with gluten-free flour.
  • Enhance the flavor of the fritters by adding herbs and spices like chili powder, cumin, or paprika to the batter.
  • If the batter is too thick, add a little milk or water to achieve a consistency that easily drops off a spoon.
  • Use a variety of corn kernels, such as white, yellow, or even rainbow corn, to add visual appeal to the fritters.
  • Serve the fritters hot with your favorite dipping sauce, such as ketchup, salsa, or sour cream.

Conclusion:

Corn fritters are a versatile and delicious snack or side dish that can be enjoyed for breakfast, lunch, or dinner. With simple ingredients and a quick preparation time, they are a perfect option for busy individuals or those looking for a tasty treat. Whether you prefer them crispy or soft, plain or loaded with add-ins, corn fritters are sure to satisfy your cravings. So, gather your ingredients, heat up your skillet, and enjoy the delightful experience of homemade corn fritters!
