18 (6 inch) corn tortillas, torn in half

This recipe is as easy as making a box of macaroni and cheese (almost), and it's a one dish comfort meal. I've been making this as long as I can remember, and don't think I ever had a recipe for it. When I made it this week, I looked to see if it was posted, and I could only find recipes with "cream of whatever" soup or sour cream, and most of them required baking in the oven. This recipe is creamy and delicious from the simple bechamel (white) sauce. This is a flexible recipe, too. I love to use a generous amount of a mixed pepper blend, freshly ground, for seasoning because I don't like bland food. I've also used lemon pepper seasoning, and/or freshly snipped chives and parsley. It's up to you to choose your favorite seasoning or herbs to go nicely with the tuna. Tuna noodle casserole is one of the most popular American casseroles, and is common is any region of the U.S.

2 tablespoons all-purpose flour
2 cups whole milk
1 teaspoon kosher salt

2 (6 ounce) cans tuna, drained (I prefer albacore solid packed in water)

  • Cook the egg noodles.
  • During the last few minutes add the frozen peas to the simmering noodles; then drain.
  • Meanwhile, melt the butter in a medium saucepan over medium heat.
  • Whisk in the flour, and continue whisking for about 2 minutes or until the flour butter mixture starts to turn a beige color (a very light colored roux).
  • Continue whisking and slowly add 1 of the cups of milk, incorporating the liquid as you whisk; then add the remaining 1 cup of milk.
  • Let it come to a gentle boil, stirring regularly to keep from burning on the bottom of the pan as it thickens.
  • When it's thick enough to coat a spoon and leave a strip behind where you ran your finger through the coating on the spoon, it's ready to add the drained tuna.

We always had a fourth of a bag left because by then they would be all crushed and the kids wouldn't eat them. One day my husband gave me a challenge to try to come up with some way to use the crushed chips, at the same time one of my grandsons decided he was going vegetarian. So I took it on as a double challenge and also decided I could only use what I had on hand. This is how the recipe was born. Ingredients can be adjusted to fit whatever size casserole dish you might want to use. Serve with a dollop of sour cream and a side of mexican rice (optional) I make it in a large alluminum tray (20 3/4"L x 12 13/16"W x 3 3/8"D) the qty of the ingredients are for this pan but can be adjusted for any size casserole pan.

  • Pour a third of one can enchilada sauce on the bottom of the pan, or just enough to coat the bottom.

1 small onion, diced
1 c minute rice, do not cook
1 c tomato juice

  • 1. Wash cabbage and chop into small pieces, then lay in bottom of casserole pan. I use an enamel pan and it comes out great.
  • 2. Next, over the Chopped cabbage layer, tear up uncooked ground beef (it will cook as the casserole cooks in the oven) and layer on top of cabbage.
  • 3. Sprinkle minute rice (uncooked) over ground beef.
  • 4. Add chopped onion over ground beef and rice.
  • 5. Add final layer of chopped cabbage. Salt and pepper to taste.
  • 6. Pour 1 cup of tomato juice over entire top layer. You may add more if you like a juicer casserole.
  • 7. Finally put into preheated 350 degree oven. Bake for one hour. I usually stir mine all together after one half hour.

2 pkg taco seasoning mix
1 can(s) tomatoe soup/tomatoe sauce

1/3 pkg totilla chips (this is a good time to use up the not so fresh ones, bottom of the bag)
2 lb browned ground beef
1/2 c onions chopped (optional )
1/3 c peppers sweet or hot (optional)

Steps:

  • 1. Brown your meat, and then add onions and peppers, taco seasoning, and required amount of water. Usually a cup per package of seasoning, and 1 package to a lb of beef.
  • 2. Let this simmer for about 10 mins to reduce and let the meat soak up flavor.
  • 3. Add your diced tomatoes, tomato soup/sauce, corn, and tortilla chips. Let this heat through.
  • 4. Dump into a sprayed oil casserole dish, and top with cheese. Bake for about 20 min. on 350, or until cheese is melted, and slightly browned.

1/2 of a medium onion, chopped
1 garlic clove, minced
1 lb ground beef (or meat of your choice)
1 (1 1/4 ounce) package taco seasoning
1 (14 1/2 ounce) can diced tomatoes (I use the one with green chilies)
1 (15 1/4 ounce) can corn, drained
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can kidney beans, drained and rinsed
3/4 cup sour cream
1/2 cup shredded cheese (A mix of cheddar and pepper jack is good)
1 (6 ounce) can of large black olives, sliced
4 cups pasta (I use large elbow macaroni)

Steps:

  • In a large skillet, heat oil, then add chopped onion. Cook just until onion begins to turn translucent, then add minced garlic.
  • In a large pot, cook pasta in salted, boiling water until just done (about 9 minutes. It will cook a little more in the oven). This can be going on while you're assembling the ingredients in the skillet.
  • Returning to the skillet, add beef and taco seasoning. Once the beef is cooked through, then add tomatoes, corn, beans, and sour cream. Stir until well combined. Add shredded cheese. Then add drained, cooked pasta.

9 ounces egg noodles
2 (10.5 ounce) cans cream of chicken soup
1 cup sour cream
3 cups cubed cooked chicken
1 (6 ounce) package stuffing mix
2 cups chicken broth
¾ cup butter

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix cream of chicken soup and sour cream together in a bowl; stir in chicken and noodles. Spoon mixture into the prepared baking dish; sprinkle with stuffing mix.
  • Combine chicken broth and butter in a saucepan over medium heat until butter is melted; pour over stuffing layer.
  • Bake in the preheated oven until casserole is bubbling and stuffing is browned, about 30 minutes.

10 flour tortillas
2 cans of vegitarian refried beans
2 cups of shredded cheese-mexican blend or cheddar
small can of chopped green chiles
15 oz can of red mild enchilada sauce
1/2 cup of warm water
small can of chopped black olives
8oz size of lowfat cream cheese, block style
cilantro for garnish
avocado for garnish

Steps:

  • preheat oven to 400 degrees. spray the bottom of a glass baking dish with Pam cooking spray. mix the refried beans with the cream cheese until it is blended smoothly. add the chiles to the bean/cream cheese mixture. spoon a small amount of the mixture into each tortilla. roll the tortillas up, seam side down, and place them into the baking dish. sprinkle the top of the enchiladas with the shredded cheese and the sliced olives. next, pour the enchilada sauce over the top of the tortillas. then pour the 1/2 cup of water over the tortillas. make sure the sauce and water is evenly distributed over the tortillas. bake in over for 25-35 minutes. casserole is done when cheese and sauce is bubbly. garnish with the cilantro and avocado.

1 can(s) corn niblets
1 can(s) green beans
1 can(s) stewed tomatoes
4-5 medium potatoes cooked and mashed

Steps:

  • 1. Heat oven to 350 degrees F Cook hamburg loose in skillet. Add stewed tomatoes, drained corn and green beens. Heat all. Pour into deep casserole dish. Cover with mashed potatoes.
  • 2. Bake 350 degree oven til tops of potatoes are brown. One of those didn't have much in the house recipes, haha ~~
