6 slices bacon, chopped
1 large onion, diced
3 cloves garlic, minced
2 cups chicken broth
pinch of dried oregano
pinch of cayenne pepper
½ teaspoon ground cumin
salt to taste
2 (14.5 ounce) cans black beans, rinsed and drained
14 ½ fluid ounces water
½ teaspoon ground black pepper
⅓ cup minced green onion
2 teaspoons sambal paste (or minced red chiles)
juice of 1 lime
2 tablespoons chopped green onion
3 tablespoons sour cream

Steps:

  • Place bacon in a cold pot. Turn heat to medium, cook and stir until the bacon is cooked but not crisp.
  • Stir in onion; cook and stir for 5 minutes, until the onion turns translucent and golden.

  • Serve garnished with relish, chopped green onions, and sour cream.

Tips:

  • Use canned black beans: This is a great way to save time and still get all the flavor and nutrients of black beans.
  • Rinse the black beans before using: This removes the excess starch and helps to prevent the soup from becoming too thick.
  • Use a variety of vegetables: This will add flavor, texture, and nutrients to the soup. Some good options include onions, celery, carrots, bell peppers, and corn.
  • Use a flavorful broth: This is the base of the soup, so it's important to use a broth that you like the taste of. Chicken broth, vegetable broth, or beef broth are all good options.
  • Season the soup to taste: Add salt, pepper, and other spices to taste. You can also add a squeeze of lime juice or a dollop of sour cream for extra flavor.

Conclusion:

Black bean soup is a delicious, healthy, and easy-to-make meal. It's perfect for a quick lunch or dinner, and it's also a great way to use up leftover black beans. With a few simple ingredients and a little bit of time, you can have a delicious bowl of black bean soup that the whole family will enjoy.
