THE BEST EASY BEEF AND BROCCOLI STIR-FRY

The Best Easy Beef and Broccoli Stir-Fry image

I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

Yield 4 servings

Number Of Ingredients 13

1 1/2 tablespoons cornstarch
1/4 teaspoon salt
1/4 teaspoon black pepper
3/4 pound sirloin beef tips, sliced against the grain 1/8 inch thick
3 tablespoons vegetable oil
10 ounces frozen broccoli florets, thawed
3 garlic cloves, chopped
3 tablespoons soy sauce
1/3 cup water
Accompaniment: rice
Garnish: fresh cilantro sprigs
Special Equipment
a well-seasoned 14-inch flat-bottomed wok

Steps:

  • Toss together cornstarch, salt, pepper, and beef in a bowl until meat is coated.
  • Heat 2 tablespoons oil in wok over moderately high heat until hot but not smoking, then stir-fry beef until just cooked through, about 1 minute. Transfer with a slotted spoon to another bowl and keep warm, loosely covered with foil.
  • Add remaining tablespoon oil to wok along with broccoli and garlic and stir-fry over moderately high heat until broccoli is just tender and garlic is pale golden, about 2 minutes.
  • Add soy sauce and water and bring to a boil. Return meat to skillet and cook, stirring, until sauce is thickened, about 2 minutes.

Tips:

  • Prep your ingredients in advance: Cut the beef, broccoli, and other vegetables into bite-sized pieces before you start cooking. This will save you time and ensure that everything cooks evenly.
  • Use a large skillet or wok: This will give you plenty of room to stir-fry the beef and vegetables without overcrowding them.
  • Get your wok or skillet really hot before adding the oil: This will help to prevent the beef and vegetables from sticking.
  • Don't overcrowd the wok or skillet: Cook the beef and vegetables in batches if necessary.
  • Stir-fry the beef until it is cooked through and slightly browned: This should take about 5 minutes.
  • Add the vegetables and cook until they are tender-crisp: This should take about 3 minutes.
  • Add the sauce and cook until it is heated through: This should take about 1 minute.
  • Serve immediately over rice or noodles: Enjoy your delicious beef and broccoli!
