APPLE MUFFINS RECIPE
Any day that starts with these tender Apple Muffins is bound to be a good one. One of the best things about these muffins is their texture; one test kitchen professional said they "aren't so soft they will fall apart, but they are almost cake-like in their softness." Not only would these sweet, soft muffins be an easy grab-and-go breakfast, but you can also make a batch for afternoon coffee or tea with the girls or to welcome a new family to the neighborhood. This recipe makes 12 muffins, so depending on the occasion and how many visitors you have, you might need to make more. Although the recipe calls for Fuji, our test kitchen professionals agreed that any apple variety works. A tip from the test kitchen: Don't over-work these muffins-they only need mixing until it is just combined, which helps keep them super soft. Begin the fall season with these fresh Apple Muffins and a warm apple cider. Is there such thing as too many apples? We don't think so. It's time for fall, y'all.

QUICK & EASY APPLE MUFFINS
This is a simple recipe derived from an old Betty Crocker's Cookbook, published 1979. It is great for mornings when the kids don't want cereal or when you want them to have a healthier snack for school. The recipe is not low in fat, therefore more suited for active children. You can substitute a different oil to alter the flavor - do look for a "healthy" choice. I altered the recipe slightly to suit our tastes and simplified one of the steps, choosing to chop the apples instead of grating them. Vanilla sugar can be substituted with 1 c. sugar and 1/4 teaspoon vanilla extract. You can make vanilla sugar yourself by placing a vanilla bean into a sealable jar and covering it with sugar, let it set at least 24 hours. It makes a great flavouring. Always close the jar tightly to retain the aroma and remember to refill the sugar now and then. Best served immediately. (But, then again, they are gone quickly, anyway)

Tips:
- Use fresh, ripe apples for the best flavor. Granny Smith, Honeycrisp, and Braeburn are all good choices.
- Peel and core the apples before grating them. This will help to prevent the muffins from being too chunky.
- Mix the dry ingredients together in one bowl and the wet ingredients together in another bowl. This will help to ensure that the muffins are evenly mixed.
- Do not overmix the batter. Overmixing will make the muffins tough.
- Fill the muffin cups about 2/3 full. This will allow the muffins to rise properly.
- Bake the muffins at 400 degrees Fahrenheit for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Conclusion:
These apple muffins are a delicious and easy-to-make treat that are perfect for breakfast, lunch, or a snack. They are also a great way to use up leftover apples.
