Steps:
- 2 oz loose Mexican-style chorizo, 1 small onion, peeled and sliced into rings, ½ tomato diced, 4 c grated monterey jack, 1 tbsp 151 proof rum or everclear. Preheat oven to 400 degrees. Fry chorizo in a medium skillet over medium heat, breaking up the meat for 6-8 minutes. Add onion and tomatoes and cook until onions are soft, 8-10 minutes and set aside. Put cheese into a small cast-iron skillet and bake until melted, 12-15 minutes. Spoon chorizo mixture over cheese. Pour rum or everclear over cheese and carefully ignite. Serve with flour tortillas.
Tips:
- Use a cast iron skillet or a heavy-bottomed pan for even heat distribution and to prevent sticking.
- Shred your cheese finely for quicker melting and smoother texture.
- Use a variety of cheeses to create a more complex flavor. A good combination is Oaxaca cheese, Monterey Jack, and queso Chihuahua.
- Add some cornstarch or flour to the cheese mixture to help thicken it and prevent it from becoming too runny.
- Season the cheese mixture with salt, pepper, and other spices to taste.
- Cook the cheese mixture over medium heat, stirring constantly, until it is melted and bubbly.
- Once the cheese is melted, add your choice of toppings, such as chorizo, bacon, jalapeños, or grilled vegetables.
- Serve the queso flameado immediately, while it is still hot and bubbly.
Conclusion:
Queso flameado is a delicious and versatile dish that can be enjoyed as an appetizer, main course, or side dish. It is perfect for parties and gatherings, as it is easy to make and can be customized to everyone's taste. With its rich, cheesy flavor and variety of toppings, queso flameado is sure to be a hit at your next event.
