This recipe was developed in the Quaker kitchens in the '50s, and, according to the brand, remains one of their 'most requested' recipes. Says Quaker: "Using oats in place of bread crumbs gives this meatloaf a moist texture and adds a nutrition boost of B vitamins, protein, and fiber. Warm and deliciously hearty, this is a recipe your whole family will love!"Recipe courtesy of Quaker Oats.21 Timeless Midwestern Recipes

Categories     Beef     Roast     Quick & Easy     High Fiber

Yield 6 to 8 People

Number Of Ingredients 9

1-1/2 pounds lean ground beef or turkey
3/4 cup Quaker® Oats
3/4 cup finely chopped onion
1/2 cup catsup
1 egg, lightly beaten
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Heat oven to 350°F. Combine all ingredients in large bowl; mix lightly but thoroughly. Bake 50 to 55 minutes or until meatloaf is to medium doneness (160°F for beef, 170°F for turkey), until not pink in center and juices show no pink color. Let stand 5 minutes before slicing. As good as the meatloaf is, it would not be complete without the sauce. Mom formed the mixture into a loaf and placed it in the middle of a roast pan to cook. Twenty minutes before it was done, the grease/liquid was drained off. She then covered the meatloaf with 1/2 cup of grated onion, followed by 1 cup of (Heinz) ketchup mixed with 4T of brown sugar, 4T vinegar, 2T Worchestershire Sauce; heated mixed ingredients but did not boil. I always make a double batch to spoon over each piece. Cover and refrigerate leftovers promptly and use within 2 days, or wrap airtight and freeze up to 3 months.

Tips:

  • When selecting ground beef for your meatloaf, choose a combination of lean and fatty beef for the best flavor and texture. Ground chuck or ground sirloin are both good options.
  • Adding rolled oats to the meatloaf mixture helps to absorb excess moisture and keeps the meatloaf moist and tender.
  • Be sure to season the meatloaf generously with salt and pepper, as well as other herbs and spices of your choice. This will help to enhance the flavor of the meatloaf.
  • Using a loaf pan that is slightly smaller than the amount of meatloaf mixture you have will help to ensure that the meatloaf is cooked evenly.
  • Basting the meatloaf with the glaze during the last 15 minutes of cooking will help to keep it moist and flavorful.

Conclusion:

Quaker Oatmeal Prize-Winning Meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of ground beef, rolled oats, and spices creates a moist and flavorful meatloaf that is sure to please everyone at the table. So next time you're looking for a hearty and satisfying meal, give this recipe a try. You won't be disappointed!
