1/2 cup red onion (chopped (about half a medium onion))
1 cup roma tomatoes (diced (about 4 to 5 tomatoes))
1 bunch cilantro (chopped (about 1/2 cups))
1 diced jalapeño (optional)
juice of a lime
salt and pepper to taste
For the Rice
2 cups long grain rice
3.5 cups water
2 tablespoons butter
2 teaspoons salt
½ lime
bunch of cilantro
Burrito Bowl ingredients
4 cups cooked and diced Qdoba Chicken breasts (click for recipe)
1 can (15 oz. canned corn, drained and rinsed)
1 can (15 oz. black beans, drained and rinsed)
1 cup chopped lettuce (any type)
Optional toppings: Cheese (sour cream, guacamole, grilled veggies, salsa)

  • Wash rice in a large bowl under cold water for 2-5 minutes until the water runs clear. Allow to soak for at least 5 minutes. 15 oz (1 can), undrained black beans
1½ tsp dried oregano
1½ tsp ground coriander
1½ tsp ground cumin
1 tbsp ground achiote
3 tbsp divided olive oil
2 tbsp minced red onion
1 tbsp peeled and minced garlic
6 (1 package) large tortillas
8 oz (1 package), shredded Mexican cheese
¼ cup tomato salsa
¼ cup sour cream
