This is a great recipe that I've had for a long time; however, the original called for black eyed peas. You can substitute them in this recipe if you like, but to me, the fresh purple hull peas gives it a better flavor.

PURPLE HULL PEAS WITH BACON AND ONIONS

Purple Hull Peas With Bacon and Onions image

My maternal grandparents from Mississippi always grew and served purple hull peas, so I enjoy memories of them whenever it is pea season. This recipe was a winner at the Emerson, Arkansas, PurpleHull Pea Festival & World Championship. I made minor alterations to suit our tastes. See www.purplehull.com for more recipe ideas.

Tips:

  • To make sure your cornbread is moist and tender, use buttermilk instead of regular milk. Buttermilk adds a slight tanginess to the cornbread, and it also helps to keep it moist.
  • Don't overmix the batter. Overmixing can make the cornbread tough. Stir just until the ingredients are combined.
  • Use fresh cornmeal for the best flavor. Fresh cornmeal has a more pronounced corn flavor than store-bought cornmeal.
  • If you don't have purple hull peas, you can use another type of bean, such as black beans or pinto beans.
  • Serve the cornbread warm with butter and honey or your favorite chili or stew.

Conclusion:

This purple hull pea cornbread is a delicious and easy-to-make side dish that is perfect for any occasion. It is moist and tender, with a slightly sweet and savory flavor. The purple hull peas add a pop of color and a nutty flavor to the cornbread. Serve this cornbread warm with butter and honey or your favorite chili or stew for a satisfying meal.
