1 cup sugar
2 packages (3 ounces each) cook-and-serve vanilla pudding mix
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
4 large eggs
1-1/4 cups canola oil
1 can (15 ounces) solid-pack pumpkin

Steps:

  • In a large bowl, combine the flour, sugar, pudding mixes, baking soda, cinnamon and salt. In another bowl, combine the eggs, oil and pumpkin. Stir into dry ingredients just until moistened. 1 cup pumpkin puree
1 cup white sugar
2 eggs
¼ cup canola oil
1 cup coarsely chopped walnuts

2/3 cup water

3 cups oats
1/3 cup gluten flour
1/3 cup oil
1/3 cup honey
1 1/2 tablespoons instant yeast

1/3 cup wheat bran
1/3 cup toasted crushed almonds (or your choice of nuts)

Steps:

Makes a nice big loaf full of healthy ingredients. The only ingredient I changed was that I left out the 1/4 cup soy flour and just added 1/4 cup more whole wheat flour because I don't like keeping too many flour types around...aaand, I'm doing this the lazy way, in the bread machine! My dough cycle is 90 minutes.

1 cup water
1/2 cup pumpkin puree
2 tablespoons honey (or brown rice syrup)
