PUMPKIN OAT BRAN BREAD OR MUFFINS
Not your typical muffin, but they pack in 5 grams of fiber per muffin and are low calorie/fat. Oh and they taste great too! For even more fiber add the wheat germ. I make double batches and freeze half of them for down the road. Scale recipe back to 12 if you only want to make 1 muffin tray of these.

Steps:
- Combine first six ingredients in a large bowl; stir well.
- Make a well in center of mixture.
- Combine pumpkin and next three ingredients; stir well.
- Add to dry ingredients, stirring just until moistened.
- Spoon into muffin pans coated with cooking spray, filling ¾ full.
- Bake at 425 degrees for 20 minutes.
- Remove from pans immediately; serve warm or at room temperature.
- Banana Oat Bran Muffins: Substitute ¾ cup mashed ripe banana for pumpkin.
- Apple-Oat Bran Muffins: Substitute 1/2 cup minced apple for pumpkin.
- Substitute apple pie spice for pumpkin pie spice.
- Add 1 Tsp ground cinnamon to dry ingredients.
Tips:
- Choose ripe pumpkins: Look for pumpkins with deep orange coloration and firm, heavy flesh. Avoid pumpkins with blemishes or soft spots.
- Use fresh or frozen oats: Old or stale oats can result in a dry, crumbly bread. For the best results, use fresh or frozen oats.
- Don't overmix the batter: Overmixing can result in a tough, dense bread. Mix the batter just until the ingredients are combined.
- Don't overcook the bread: An overcooked loaf of pumpkin oat bran bread will be dry and crumbly. To prevent this, check the doneness of the bread by inserting a toothpick into the center. If the toothpick comes out clean, the bread is done.
- Serve warm or at room temperature: Pumpkin oat bran bread is best served warm or at room temperature. This allows the flavors to meld and the bread to develop a moist, tender texture.
Conclusion:
Pumpkin oat bran bread is a delicious and nutritious quick bread that can be enjoyed for breakfast, lunch, or as a snack. It is packed with wholesome ingredients like pumpkin puree, oats, and bran, and is a good source of fiber, vitamins, and minerals. This bread is also easy to make and can be customized to your liking. Try adding different spices, nuts, or seeds for a unique flavor variation. With its moist, tender texture and sweet, pumpkin-y flavor, pumpkin oat bran bread is sure to be a hit with everyone who tries it.
