When my oldest granddaughter gave me eight of the 50 pumpkins she grew in her backyard, I didn't know how I'd use them all up! Then I remembered this recipe from a dear friend-I'm glad I tried it. I froze some of the pumpkin to use in this and other recipes, and also froze some of the sloppy joe mixture to enjoy later.-Eleanor McReynolds, Scott City, Kansas

PUMPKIN SLOPPY JOES

From perfect entertaining: This savory dish, a variation of Sloppy Joes with a Halloween twist is very flavorful and unique. Sloppy Joes don't have to go far to look slightly disgusting and messy, and this version is sure to please all those sloppy eaters. This is also a very low fat dish that is perfect to serve to mixed company. Kids will love the sloppiness and adults will appreciate the slightly more "grown up" flavor. This is great on rolls or thick slices of French bread, my preference.

Tips:

  • Choose the right pumpkin: Look for a small, sugar pumpkin that is about the size of a softball. This will ensure that the pumpkin is sweet and flavorful.
  • Roast the pumpkin: Roasting the pumpkin brings out its natural sweetness and flavor. Be sure to roast the pumpkin until it is tender and slightly caramelized.
  • Use a food processor: A food processor is the easiest way to puree the pumpkin. Simply add the roasted pumpkin to the food processor and pulse until it is smooth.
  • Add spices: Pumpkin pie spice is a classic combination of spices that pairs perfectly with pumpkin. Feel free to add other spices, such as cinnamon, nutmeg, or ginger, to taste.
  • Don't overcook the filling: The pumpkin pie filling should be cooked until it is just set. Overcooking the filling will make it dry and crumbly.
  • Let the pie cool completely: The pumpkin pie needs to cool completely before serving. This will allow the filling to set and the crust to firm up.

Conclusion:

Pumpkin pie is a classic fall dessert that is enjoyed by people of all ages. With its creamy, flavorful filling and flaky crust, it's the perfect way to end a Thanksgiving meal or any special occasion. So next time you're looking for a delicious and festive dessert, be sure to give pumpkin pie a try.
