1 box white cake mix (15.25oz)
1/2 cup vegetable oil
1/2 cup water
1 cup pumpkin puree
1/2 cup brown sugar
1 tsp pumpkin pie spice
1/2 tsp ground cinnamon
1/8-1/4 tsp ground allspice
1 tsp vanilla extract
3 eggs
8 oz cream cheese, at room temperature
3 cups powdered sugar
1/2 cup butter, melted
1 cup pecans
1 cup shredded coconut, sweetened (sweetened)
1/4 cup milk chocolate chips, optional
1/4 cup butterscotch chips, optional

Steps:

  • Preheat oven to 350 degrees and grease a 9x13 baking pan.
  • Sprinkle coconut and pecans over the bottom of the baking pan. Set aside.
  • In a bowl, mix cake mix, vegetable oil, water, pumpkin brown sugar, pumpkin pie spice, cinnamon, all spice, vanilla extract and eggs together. Mix until well combined. Pour batter over the coconut and pecans.

1 box yellow cake
1/2 cup milk

1 cup pumpkin puree
1 tablespoon pumpkin pie spice
8 ounces cream cheese, cubed
1/2 cup butter, cubed
4 cups powdered sugar
1/2 cup white chocolate chips

Steps:

  • Preheat the oven to 350°F.
  • Coat a 9×13 pan with nonstick spray and sprinkle coconut in the bottom of the pan. Set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment mix the cake mix, milk, oil, eggs, pumpkin and pumpkin pie spice on low for 30 seconds. Increase the mixer speed to medium and mix for 2 minutes, scraping the sides of the bowl as necessary.

1/2 cup vegetable oil

1/2 cup unsalted butter
3 cups powdered sugar
1/2 cup milk chocolate chips (optional)

Steps:

  • Preheat oven to 350 degrees. Spray a 9x13 baking pan with non-stick cooking spray.
