PUMPKIN DUMP CAKE

Categories     dessert

Time 4h15m

Yield 8 servings

Number Of Ingredients 10

Nonstick cooking spray, for spraying the slow cooker insert
Two 15-ounce cans pumpkin puree
1/2 cup granulated sugar
2 teaspoons pumpkin pie spice
1/2 teaspoon kosher salt
One 15.25-ounce box white or yellow cake mix
1 stick (8 tablespoons) unsalted butter, melted
1/2 cup chopped pecans
1 cup heavy cream
1/4 cup confectioners' sugar

Steps:

  • Spray the insert of a 6-quart slow cooker with cooking spray.
  • Gently combine the pumpkin puree, granulated sugar, pumpkin pie spice and salt in a bowl, then dump it into the slow cooker insert. Sprinkle the cake mix over the pumpkin puree, then, as evenly as possible, pour the melted butter on top and finish with the chopped pecans. Cover and cook on low for 4 to 4 1/2 hours (the edges of the cake should be starting to brown and crisp slightly).
  • Meanwhile, using a handheld mixer, whip the cream and confectioners' sugar together in a large bowl until stiff peaks form. Serve the cake warm with a dollop of the whipped cream.

Tips:

  • Use fresh or canned pumpkin: Fresh pumpkin puree will give your cake a richer flavor, but canned pumpkin puree is a convenient option that works just as well.
  • Don't overmix the batter: Overmixing the batter can result in a tough, dense cake. Mix just until the ingredients are combined.
  • Use a 9x13 inch baking pan: This is the standard size pan for a dump cake, and it will give you a nice, thick cake.
  • Bake the cake for 45-50 minutes: The cake is done when a toothpick inserted into the center comes out clean.
  • Serve the cake warm or cold: Pumpkin dump cake is delicious served warm with a scoop of vanilla ice cream or whipped cream, or it can be served cold as a snack or dessert.

Conclusion:

Pumpkin dump cake is an easy and delicious dessert that is perfect for fall. It is made with simple ingredients that you probably already have on hand, and it can be assembled in just a few minutes. The cake is moist and flavorful, with a sweet and spicy pumpkin flavor. It is sure to be a hit with your family and friends.
