1/3 cup sugar
1 teaspoon ground cinnamon
1/3 cup butter, melted
CREAM CHEESE FILLING:
12 ounces cream cheese, softened
1 cup sugar
3 large eggs
PUMPKIN FILLING:
1 can (15 ounces) solid-pack pumpkin
3 large eggs, separated
3/4 cup sugar, divided
1/2 cup 2% milk
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 envelope unflavored gelatin
1/4 cup cold water
TOPPING:
1 cup heavy whipping cream
3 tablespoons sugar
1/4 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a large bowl, combine crumbs, sugar and cinnamon; stir in butter. Press into an ungreased 13x9-in. baking dish. In a large bowl, beat cream cheese until smooth. Beat in sugar and eggs until fluffy. Pour over crust. Bake 15-20 minutes or until set. Cool on a wire rack., In the top of a double boiler or a metal bowl over simmering water, combine pumpkin, egg yolks, 1/2 cup sugar, milk, cinnamon and salt. Cook and stir over low heat until a thermometer reads 160°; remove from heat. Transfer to a large bowl; wipe out double boiler. , In a small saucepan, sprinkle gelatin over cold water; let stand 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Stir into pumpkin mixture; cool., In the double boiler, whisk egg whites and remaining sugar over low heat until temperature reaches 160°. I've never quite gotten the hang of making a good pie crust. So I came up with this recipe, featuring a cake mix and cookie crust. The creamy pumpkin filling pairs well with the crunchy topping.

1 package yellow cake mix (regular size), divided
1 cup crushed gingersnap cookies
1/2 cup butter, melted
1 large egg, lightly beaten, room temperature
FILLING:
1 package (8 ounces) cream cheese, softened
2/3 cup packed brown sugar
3 large eggs, lightly beaten, room temperature
1 can (29 ounces) pumpkin
1/4 cup 2% milk
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
TOPPING:
1/2 cup crushed gingersnap cookies
1/4 cup sugar
1/2 cup cold butter, cubed
1 cup chopped pecans
Additional gingersnap cookies, halved, optional

Steps:

  • Set aside 3/4 cup cake mix for topping. In a small bowl, combine gingersnap crumbs and remaining cake mix; stir in butter and egg. Press onto the bottom of a greased 13x9-in. baking dish; set aside., For filling, in a large bowl, beat cream cheese and brown sugar until smooth. Beat in eggs. Beat in the pumpkin, milk, cinnamon and vanilla and mix well. Pour over crust., For topping, in a small bowl, combine the gingersnap crumbs, sugar and reserved cake mix; cut in butter until crumbly. ⅓ cup butter, melted
1 egg
1 (29 ounce) can pumpkin
½ cup brown sugar
.66 cup milk
3 eggs
2 tablespoons pumpkin pie spice
¼ cup butter, chilled
½ cup white sugar
¾ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) and lightly grease a 9x13 inch baking dish.
  • Set aside 1 cup of cake mix. Combine remaining cake mix with melted butter and 1 egg and mix until well blended; spread mixture in the bottom of the prepared baking dish.

4 teaspoons pumpkin pie spice
3 eggs
1 cup Original Bisquick™ mix
1/2 cup packed brown sugar
1/4 cup butter or margarine
3/4 cup chopped pecans

Steps:

  • Heat oven to 350F. Spray 13x9-inch pan with cooking spray. In medium bowl, mix 1 1/2 cups Bisquick and 1/2 cup pecans. Using pastry blender or fork, cut in 1/2 cup butter until mixture is crumbly. With floured fingers, press mixture in bottom of pan. Bake 10 minutes.
  • Meanwhile, in large bowl, beat filling ingredients with wire whisk until smooth; set aside. In medium bowl, mix 1 cup Bisquick mix and 1/2 cup brown sugar. Using pastry blender or fork, cut in 1/4 cup butter until mixture is crumbly. Stir in pecans.
  • Pour filling over hot partially baked base. Sprinkle topping over filling.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes before cutting into squares. Serve with whipped cream, if desired. Store in refrigerator.

8 ounces cream cheese
1 cup powdered sugar

2 teaspoons cinnamon
4 ounces Cool Whip, remainder from 8oz container

Steps:

  • First layer: Mix all 1st layer ingredients together, press in 9x13 dish. Bake at 350°F for 15 minutes. Cool.

I came across this recipe in a grocery store flyer just before Canadian Thanksgiving. I am not a pumpkin pie fan although the rest of the family is. I should say they were. The dessert is all gone but half of a pumpkin pie remains. This will be a new tradition at our Thanksgiving table. Serve with whipped cream.

1/3 cup sugar
1/3 cup cold butter, cut into small pieces (no subs!)
1 pinch salt
1 (8 ounce) package cream cheese, softened
3/4 cup sugar
2 tablespoons sugar
2 large eggs
1 cup canned pumpkin puree
1 tablespoon flour
1 1/2-2 teaspoons cinnamon
1 1/4 teaspoons allspice
1 1/2 teaspoons vanilla
1/4 cup butter or 1/4 cup margarine, melted
1 cup whipping cream (whipped, to taste)

Steps:

  • Set oven to 350°F.
  • Set oven to second-lowest position.
  • Butter an 8 x 8-inch baking pan.
  • To make the crust: process all crust ingredients on a food processor for about 30 seconds until well blended.
  • Press the mixture lightly into the prepared baking pan.
  • Bake crust for 15 minutes, then remove from oven.
  • Meanwhile prepare the filling.
  • With an electric mixer, beat the softened cream cheese with 3/4 cup plus 2 tbsp sugar for about 2 minutes.
  • Add in eggs and beat well until combined.
  • Add in the pumpkin puree, vanilla and melted butter; mix until combined.
  • In a small cup combine flour, cinnamon and allspice, then add to the pumpkin mixture; mix about 1-2 minutes.
  • Pour over the partially baked crust, and return to oven for about 30-35 minutes, or until just set.
  • Serve at room temperature or chilled, cut into squares with a dollop of whipped cream on top.

This year they were serving samples of this made with their own Pecan Pumpkin Butter and giving away the recipe. Since I can't buy the pumpkin butter here I adapted the recipe to use a butter recipe already on Zaar. Absolutely delicious!

1 (18 ounce) box yellow cake mix
1/2 cup butter, melted
3 large eggs
1 1/4 cups pumpkin butter (I used Spicy Pumpkin Butter, takes 10 minutes to make)
1/8 cup milk
1/2 cup pecans, toasted and chopped
1 tablespoon flour
1/4 cup sugar
1 teaspoon cinnamon
1/4 cup butter, softened

Steps:

  • Measure out one cup of the cake mix and set aside for the topping.
  • Mix remaining cake mix with 1/2 cup melted butter, then mix in 1 egg.
  • Press lightly and evenly into a lightly greased 9 X 13 baking pan.
  • Mix the pumpkin butter with 2 eggs and the milk.
  • Spread pumpkin butter over the cake base evenly.
  • Sprinkle chopped pecans over the pumpkin.
  • Mix the 1 cup reserved cake mix with the flour, sugar and cinnamon.
  • Add softened butter and mix until crumbly.
  • Sprinkle crumbs over the top of the cake.
  • Bake at 350 degrees for 35-40 minutes, until golden.
  • Note: If you're making your own pumpkin butter let it cool before using in this recipe.
  • Prep and cook times do not include the time to make the pumpkin butter.

2 teaspoons baking powder
1 teaspoon ground cinnamon

Steps:

  • Spray 3 1/2- to 6-quart slow cooker with cooking spray. Spoon pie filling into cooker; spread evenly.
  • Beat remaining ingredients except ice cream with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour batter over pie filling.

BOTTOM LAYER
1 box yellow cake mix
1/2 c margarine, melted (or use butter if you must)
1 egg
FILLING
1 lb solid pack pumpkin (canned is fine)
2/3 c milk (almond, soy or regular)
2 1/2 tsp pumpkin pie spices/or your own mix
1 tsp allspice
1/2 c firmly packed brown sugar
2 eggs
TOPPING
1 c reserved cake mix
1/4 c sugar
1 tsp cinnamon
1/4 c butter or margarine

Steps:

  • 1. Preheat oven to 350 degrees. Grease bottom only of 9x13 Pan (Brownie pan works well)
  • 2. Reserve 1 Cup cake mix for topping. Combine remaining cake mix with butter/margarine and egg. Press into pan.
  • 3. Combine all filling ingredients and mix until smooth. Pour over crust.
  • 4. Combine topping ingredients and sprinkle over filling.
  • 5. Bake for 45 to 50 minutes until a knife inserted in center comes out clean. (you can also test making sure it's not wiggly anymore.
  • 6. Let cool and refrigerate. Serve with a dollop of whipped cream or whipped topping, or just by itself.
  • 7. NOTE FOR LACTOSE INTOLERANT PEOPLE: If made with margarine, almond/rice soy milk it's a great lactose free dessert, for those lactose intolerant people like me. :-) ---Even though no lactose in butter, one of the healthy margarine works great.

1 1/2 cups all-purpose flour
1/2 cup cold butter or 1/2 cup margarine

1 (29 ounce) can solid pack pumpkin
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
2 (12 ounce) cans evaporated milk
whipped cream (optional)
additional ground cinnamon (optional)

Steps:

  • In a bowl, combine 1/4 cup sugar and flour.
  • Cut in butter until the mixture resembles course crumbs.
  • Press into an ungreased 13' x 9" x 2" baking pan.
  • In a bowl combine, the eggs, pumpkin, salt, spices and remaining sugar.
  • Stir in milk.
  • Pour over crust.
  • Bake at 425 degrees for 15 minutes.
  • Reduce heat to 350 degrees.
  • Bake 50-55 minutes longer or until filling is set.
  • Cool on a wire rack.
  • Cover and refrigerate overnight.
  • Cut into squares.
  • Top with whipped cream and sprinkle with cinnamon if desired.

1 cup half-and-half
1 cup honey
3/4 cup packed brown sugar
2 teaspoons pumpkin pie spice
1 teaspoon vanilla

1/2 cup whipping cream
1 tablespoon powdered sugar
15 candy pumpkins

Steps:

  • Heat oven to 350°F. In medium bowl, mix all crust ingredients with fork until crumbly. Press in bottom of ungreased 13x9-inch pan. Bake 10 minutes.
  • Meanwhile, in large bowl, beat all filling ingredients with wire whisk or electric mixer on medium speed until blended. Pour over partially baked crust.
  • Bake 55 to 60 minutes or until set and knife inserted in center comes out clean. Cool completely, about 40 minutes.
  • In chilled small bowl, beat whipping cream and powdered sugar with electric mixer on high speed until soft peaks form. Cut dessert into squares. Serve with whipped cream. Garnish each serving with candy pumpkin.

1/4 cup orange juice
1-1/4 cups canned pumpkin

1/8 teaspoon ground ginger
3 large eggs, separated, room temperature

Steps:

  • In a small saucepan, sprinkle gelatin over orange juice; let stand 1 minute. Add pumpkin, 1/2 cup sugar, milk, orange zest, salt, cinnamon, nutmeg and ginger. Heat over low heat, stirring until gelatin and sugar are completely dissolved., In a small bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly.
