4 eggs
1 ½ cups white sugar

1 cup margarine, melted
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch baking pan.
  • In a large bowl, combine pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice, and salt. Mix well, and spread into the prepared pan.

8 tablespoons (1 stick) unsalted butter, melted
1/8 teaspoon ground cinnamon
1 large egg, lightly beaten
3 large eggs
3 large egg yolks
3/4 cup dark muscovado sugar
1/4 cup granulated sugar
2 tablespoons molasses
1 1/2 cups canned pumpkin puree
1 1/4 teaspoons ground cinnamon, plus more for the top
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg

Steps:

  • To make the cinnamon crunch, preheat the oven to 350 degrees F.

3/4 cup packed brown sugar, divided
1/2 cup finely chopped walnuts
2 tablespoons butter, melted
1 unbaked pastry shell (9 inches)

1 cup canned pumpkin
1 teaspoon rum extract

1/2 teaspoon ground mace
1/4 teaspoon ground ginger
1-1/2 cups heavy whipping cream
Whipped cream and additional chopped walnuts, optional

Steps:

  • In a small bowl, combine 1/4 cup brown sugar, walnuts and butter until crumbly. Press onto the bottom of pastry shell. In a large bowl, whisk the eggs, pumpkin, extract, cinnamon, salt, mace, ginger and remaining brown sugar until blended; stir in cream. , Pour into pastry shell. Cover edges loosely with foil. Bake at 400° for 10 minutes. Reduce heat to 350°; bake 40-45 minutes longer or until a knife inserted in the center comes out clean. Remove foil. Cool on a wire rack. , Garnish with whipped cream and additional walnuts if desired. Refrigerate leftovers.

1 (15 ounce) can pumpkin puree
3 eggs
½ cup heavy whipping cream
½ cup honey
1 teaspoon ground ginger
½ teaspoon ground cinnamon
1 pinch ground nutmeg
1 pinch ground cloves
1 pinch salt
1 (9 inch) graham cracker crust
2 tablespoons butter
¼ cup honey
1 cup coconut flakes
½ cup sliced almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix pumpkin puree, eggs, cream, 1/2 cup honey, ginger, cinnamon, nutmeg, cloves, and salt together in a bowl until smooth. Pour filling into pie crust.
  • Bake pie in the preheated oven until filling is almost set and edges are beginning to brown, 50 to 60 minutes. Remove pie from oven.
  • Melt butter in a saucepan over low heat; stir in 1/4 cup honey. Add coconut and almonds; toss to combine. Spread over pie.
  • Place pie back in the oven and bake until topping is toasted and golden, about 10 to 15 minutes more.
  • Remove pie from oven and allow to cool completely.

4 tablespoons unsalted butter
1 3/4 cups (220 grams) all-purpose flour
2/3 cup (145 grams) lightly packed light brown sugar
2/3 cup (130 grams) granulated sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon fine salt
5 tablespoons vegetable oil or melted coconut oil
1 cup (240 grams) pumpkin puree
2 large eggs
1 tablespoon pure vanilla extract
1/2 cup raw walnut pieces
1/2 cup pepitas
3 tablespoons coarse raw sugar

Steps:

  • Position a rack in the center of the oven and preheat to 425 degrees F. Line every other cup in 2 muffin pans with muffin liners, for a total of 12 cups. (This will allow the tops to spread and the muffins to bake more evenly.)
  • Cook the butter in a small saucepan over medium heat until melted and starting to brown, 3 to 4 minutes. Immediately pour the butter into a medium heatproof bowl and set aside.
  • Sift the flour, brown sugar, granulated sugar, cinnamon, ginger, cloves, baking powder, baking soda and salt into a large bowl. Set aside.
  • Add the oil, pumpkin puree and 2 tablespoons water to the brown butter. Whisk until combined, about 20 seconds. Add the eggs and vanilla and whisk until smooth and lightened, about 30 seconds.
  • Stir the liquid ingredients into the dry ingredients with a rubber spatula just until combined. Divide the batter evenly among the 12 liners (about a heaping 1/4 cup for each). Sprinkle the tops with the walnuts and pepitas. Sprinkle again with the raw sugar.
  • Place both muffin pans on the center oven rack and turn the oven temperature down to 375 degrees F. Bake, rotating the pans about 3/4 of the way through baking, until a toothpick inserted into the muffins comes out with a just a few moist crumbs clinging to it, 24 to 26 minutes. Let cool in the pans on a wire rack for 10 minutes. Remove the muffins from the pan and let cool completely on the rack.

Now my daughter loves this recipe sooooo much that she has voluntered to make it every year for the pass 7 years and she also makes it for her potluck and Holiday...

1 can(s) 29 oz. pumpkin
1 can(s) evaporated milk
1 c granulated sugar
3 eggs, slightly beaten
1/2 tsp cinnamon
1 tsp vanilla extract
1 box yellow cake mix
1 c macadamia nuts, chopped
1 c butter, melted
CREAM CHEESE FROSTING
1 8 oz. pkg cream cheese
1/2 c powdered sugar
1 tsp vanilla extract
3/4 c cool whip

Steps:

  • 1. Preheat your oven to 350 degrees. Prep 9 x13 pan with waxed paper that also covers up the sides.
  • 2. In a large bowl, mix pumpkin, evaporated milk, sugar, eggs, cinnamon and vanilla extract. Mix till well incorporated.
  • 3. Pour the batter into the waxed paper lined 9 x 13 pan.
  • 4. Sprinkle evenly over the top of the pumpkin batter, the whole box of cake mix (dry). Pat the macadamia nut bits lightly on top of the cake mix. Drizzle melted butter evenly over nuts.
  • 5. Bake for 50 to 60 minutes. Remove from oven. Let cool for a few minutes so that you are able to handle the hot pan and invert onto a serving tray or another 9 x 13 pan and peel off the waxed paper. Cool completely.
  • 6. Beat together the cream cheese, powdered sugar and vanilla extract. Fold in the Cool Whip. Frost the pumpkin cake. Don't forget to refrigerate before serving, it will hold it's shape better when you cut it.

Tips:

  • For the best results, use fresh pumpkin purée. You can make your own by roasting and puréeing a sugar pumpkin, or you can buy canned pumpkin purée.
  • If you don't have any oats, you can substitute all-purpose flour or graham cracker crumbs.
