1/2 cup cold butter, cut into pieces
2 oz cold cream cheese (from 8-oz package), cut into pieces
1 egg, slightly beaten
1 package (8 oz) cream cheese, softened

1 teaspoon vanilla
1/2 cup heavy whipping cream

Steps:

  • Place almond and coconut flours in freezer 30 minutes.
  • In food processor, pulse chilled almond and coconut flours, xanthan gum and salt until combined. Add 1/2 cup butter and 2 oz cream cheese; pulse 5 to 7 times or until mixture looks like coarse crumbs. Tips:

  • Use a good quality pumpkin puree. This will ensure that your dessert has a rich, flavorful pumpkin taste. You can make your own pumpkin puree by roasting a pumpkin and then pureeing it, or you can buy canned pumpkin puree.
  • Don't overbeat the cream cheese. Overbeating will make the cream cheese grainy. Beat it just until it is smooth and creamy.
  • Chill the dessert before serving. This will help it to set and make it easier to slice.
  • Garnish the dessert with whipped cream, pumpkin seeds, or chopped nuts. This will add a festive touch and make your dessert even more delicious.

Conclusion:

This pumpkin cream cheese dessert is a delicious and easy-to-make treat that is perfect for any occasion. It is a great way to use up leftover pumpkin puree, and it is sure to be a hit with your family and friends. So next time you are looking for a dessert that is both delicious and festive, give this pumpkin cream cheese dessert a try. You won't be disappointed!
