Steps:

  • Preheat oven to 350 degrees.
  • Grease a 10-inch tube pan and set aside.

¾ cup all-purpose flour

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line 18 muffin cups with paper liners and spray with cooking spray.
  • Prepare streusel topping: combine flour, white sugar, brown sugar, pumpkin pie spice, and salt in a small bowl. Add melted butter and mix together until crumbly; set aside.
  • Prepare muffins: combine flour, pumpkin pie spice, baking soda, salt, and baking powder in medium bowl. Whisk pumpkin, white sugar, brown sugar, oil, eggs, and vanilla together in a large bowl. Fold flour mixture into pumpkin mixture until just combined (some lumps may still remain).
  • Fill the prepared muffin cups 3/4 full. Top each with about 1 1/2 tablespoons reserved streusel mixture.
  • Bake in the center of the preheated oven until streusel is golden brown, muffins have risen, and a toothpick comes out with clean with just a few moist crumbs, 22 to 25 minutes. Let cool in the muffin tins for 5 minutes, then transfer to a wire rack to cool completely, about 15 minutes.

PECAN STREUSEL
1 c brown sugar, firmly packed
1/3 c cold butter, cut into small pieces
2 tsp ground cinnamon
1 c chopped pecans
PUMPKIN MIXTURE
1 can(s) pumpkin (not pie mix) - 15 oz.
1 large eggs, slightly beaten
1/3 c sugar
1 tsp pumpkin pie spice
CAKE BATTER
1 stick butter, softened
3/4 c sugar
1 tsp vanilla extract
3 large eggs
2 c all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 c sour cream

Steps:

  • 1. Streusel Mixture: Combine the brown sugar, butter, cinnamon, and pecans, working in the butter until the mixture is crumbly.
  • 2. I simply do this with my fingers. Divide it in half right inside the bowl and refrigerate until needed.
  • 3. Pumpkin Mixture: In a separate bowl, combine the pumpkin, beaten egg, sugar, and pumpkin pie spice. Set aside.
  • 4. Cake Batter: In a large bowl cream together butter, sugar, and vanilla for about 5 minutes. It won't look like much at this point.
  • 5. Add eggs, one at a time, beating well after each addition, until light and fluffy.
  • 6. In a separate bowl combine the flour, baking powder, and baking soda. Measure out your sour cream.
  • 7. Add the dry ingredients to the butter mixture alternately with the sour cream, beginning and ending with flour mixture. I do this with a wooden spoon so that I don't over beat the batter and make the cake dry and tough.
  • 8. Drop 2 cups of batter in dollops in the bottom of a 9 x 13 baking pan (note: if not using a non-stick pan grease the pan before adding the batter). It will look as though there isn't going to be enough batter for two layers, but it IS plenty.
  • 9. I use an offset spatula then to spread the batter into an even layer.
  • 10. Sprinkle one half of the streusel (about 1 cup) over the batter.
  • 11. Dollop all of the pumpkin mixture onto the streusel and gently spread it into an even layer with an offset spatula. Here again, it will look like there isn't enough but there IS plenty. Just do it in the dollops like I did the batter and spread it out.
  • 12. Drop the remaining 2 cups of cake batter in dollops over the pumpkin mixture.
  • 13. Carefully spread the batter over the pumpkin mixture with an offset spatula.
  • 14. Sprinkle remaining streusel over the batter.
  • 15. Bake in a 325 degree oven for 50 minutes to 1 hour. In my own personal, it has taken as few as 45 minutes but in other ovens that I have baked it in it took about 52. If your oven tends to cook hot, begin checking around the 40 minute mark. A tester inserted to the center should come out clean, with maybe a slight crumb clinging.
  • 16. Also, I use a non-stick pan so I do not grease it and I have never had a problem with it sticking and I have made this MANY times. If yours isn't non-stick, I would suggest you lightly spray your pan with a little non-stick cooking spray.

I also topped it off with a glaze with Pecans. My family loved this cake. I Am adding this to my Fall favorites list. I hope you all enjoy it!

1/2 tsp ginger
1/4 tsp ground cloves
1/4 tsp nutmeg
1 Tbsp cinnamon
3 c all purpose flour'
1 tsp salt
2 tsp baking soda
1/2 c apple sauce
1/2 c softened butter
1 c granulated sugar
1 c light brown sugar
4 eggs
1 c canned pure pumpkin
3/4 c vanilla greek yogurt low-fat or regular
1 tsp vanilla
1 c chopped baking apples the granny smith
3/4 c toasted pecans divided, or walnuts
FILLING
8 oz softened cream cheese
1/4 c sugar
1/2 of 1 beaten egg
1 Tbsp flour
GLAZE
2 c powdered sugar
1/4 c softened butter
1-3 Tbsp milk ( depending how thick you like your glaze)
a dash of orange food coloring if desired.
1/4 c reserved pecans, or walnuts from batter ingredients

Steps:

  • 1. Grease and flour a Bundt pan. Heat oven to 350°.
  • 2. In a bowl. Mix the spices, baking soda, salt, and flour. Set aside.
  • 3. In another bowl. Beat on low the butter, sugars, and apple sauce, together.
  • 4. Add n the pumpkin and yogurt. Mix well.
  • 5. Add the eggs 2 at a time, beating in between additions of eggs. Beat well.
  • 6. Mix in the vanilla, add in the flour mixture, and mix well. Add the apples, and 1/2 cup pecans. Stir well to combine.
  • 7. Note: you may place half the cake batter. Next top with cream cheese filling and batter, if desired, or place one third of the pumpkin batter in the bottom of a Bundt pan. Place half of the cream cheese mixture over the batter avoiding the outside edge and inside edge of pan. Place another third of batter over the cream cheese mixture. Top batter with remaining cream cheese mixture. Then top again with remaining batter.
  • 8. Place in 350 degree oven. Bake 1 hour to 1 hr and 15 min. Check with pick . If the pic comes out clean just a couple crumbs it is done.
  • 9. Cool cake for 15 minutes. Invert onto a platter. You make cool cake completely before frosting, or you may place over warm cake for a glaze. Make the icing. Beat cheese, powdered sugar, and vanilla together. Add milk 1 tablespoon at a time until you reach your desired consistency. ( you may add in food coloring at this point if desired . ) Place spoonfuls of icing over cake. Top with pecans, and let set until cool. Slice and serve.
