1 1/2 cups 1:1 gluten free baking flour
1½ teaspoons pumpkin pie spice
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup pumpkin puree
⅓ cup maple syrup
2 teaspoons vanilla extract
⅓ cup unsweetened applesauce
½ cup chocolate chunks

Steps:

  • Preheat oven to 350° F.
  • Spray a 9″ x 9″ baking dish with cooking spray and cover with parchment paper. (this will help you remove the bars more easily later)

I love that it has a mild sweetness and isn't over powering. So, if you prefer really sweet things I suggest you add more sugar. I also love how light these are.

2 cups baking mix
1 cup quick oats
1 teaspoon baking powder
1 cup chocolate chips
1 tablespoon and 1 teaspoon pumpkin pie spice (Separated)
1 (15 ounce) can packed pumpkin
1 egg
1 cup milk
3/4 cup sugar
1 cup toasted chopped pecans
powdered sugar, for dusting

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl add baking mix, oats, baking powder, chocolate chips, and the tablesppon of pumpkin pie spice. Stir until combined.
  • In a medium bowl whisk together pumpkin, teaspoon of pumpkin pie spice, egg, milk, and sugar until smooth.
  • Stir in pecans.
  • Add wet ingredients to dry and stir until combined.
  • Spoon minture into greased 9 X 13inch pan and bake for 25 mins or until toothpick inserted in the middle comes out clean.

2 sticks unsalted butter, softened
¾ cup granulated sugar
½ cup light brown sugar
1 large egg
