Tips:

  • For the best results, use fresh pumpkin puree. You can make your own puree by roasting a pumpkin and then blending the flesh until smooth, or you can use canned pumpkin puree.
  • If you don't have pumpkin pie spice, you can make your own by combining ground cinnamon, ground nutmeg, ground ginger, and ground cloves. You can also use a pre-made pumpkin pie spice blend.
  • To make sure the cookies are soft and chewy, don't overmix the dough. Once the ingredients are combined, mix just until the dough comes together.
  • If you want the cookies to be crispy, bake them for a few minutes longer. Keep an eye on them so they don't burn.
  • Let the cookies cool on a wire rack before enjoying them. This will help them to firm up and hold their shape.
