1 ½ cups graham cracker crumbs
¼ cup white sugar
⅓ cup butter, melted
3 (8 ounce) packages cream cheese, softened
1 cup packed brown sugar
1 (15 ounce) can solid pack pumpkin
2 tablespoons cornstarch
1 ¼ teaspoons ground cinnamon
½ teaspoon ground nutmeg
1 (5 ounce) can evaporated milk
2 eggs
2 cups sour cream
⅓ cup white sugar
1 teaspoon vanilla extract
1 pinch ground cinnamon, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch springform pan.

1 cup graham cracker crumbs
3 tablespoons butter, melted

  • Spread sour cream mix evenly over top.
  • Return to water bath and bake 5 minutes.
  • Remove cheesecake and put onto a wire rack. Discard foil.
  • With a small knife loosen cheesecake from pan, to help prevent cracking when cooling. Cool cheesecake completely.
  • Cover, and refrigerate cheesecake at least 6 hours or over night. Refrigerate leftovers.

2 (16 ounce) cans solid-pack pumpkin
