CHOCOLATE-PUMPKIN SWIRL BREAD WITH MARMALADE BUTTER

Chocolate-Pumpkin Swirl Bread with Marmalade Butter image

Categories     dessert

Time 2h20m

Yield one 9-inch loaf

Number Of Ingredients 16

1 stick (8 tablespoons) unsalted butter, at room temperature
1/3 cup orange marmalade
1/2 teaspoon finely grated orange zest
Pinch fine sea salt
Butter or nonstick cooking spray, for the pan
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/2 teaspoon baking powder
1/2 teaspoon fine salt
1 1/2 cups granulated sugar
1/2 cup vegetable oil
2 large eggs
1 cup canned pumpkin puree
1 teaspoon vanilla extract
3 ounces semisweet chocolate, melted and cooled

Steps:

  • For the marmalade butter: Mix the butter, marmalade, orange zest and sea salt together in a bowl until smooth. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Remove from the refrigerator 15 minutes before serving.
  • For the swirl bread: Preheat the oven to 350 degrees F. Brush a 9-by-5-inch loaf pan with butter, or spray with nonstick spray; set aside.
  • Combine the flour, baking soda, pumpkin pie spice, baking powder and fine salt in a medium bowl.
  • Place the sugar and oil in the bowl of a stand mixer fitted with the paddle attachment and beat on medium-high speed until well combined (it'll look like wet sand), about 1 minute.
  • Turn the mixer to medium speed and add the eggs, one at a time, beating well after each addition. Reduce the speed to low, add the pumpkin puree and vanilla extract, and mix until just combined, about 30 seconds. Stop the mixer and scrape down the sides of the bowl and the paddle. Add the flour mixture, and mix until just combined.
  • Remove the bowl from the mixer and drizzle the melted chocolate evenly over the batter.
  • Using a rubber spatula, fold the chocolate into the batter until it's just swirled in. (Be careful not to fully incorporate the chocolate into the batter--you want a marbled effect.)
  • Pour the batter into the prepared loaf pan and spread it into an even layer. Bake until the bread is browned on top and a toothpick inserted into the center comes out with a few moist crumbs attached, 50 to 60 minutes. Let cool in the pan on a wire rack for 10 minutes. Remove from pan and let cool another 10 minutes before slicing. Serve with the marmalade butter.

PUMPKIN BREAD WITH BROWN BUTTER AND BOURBON

Pumpkin Bread With Brown Butter and Bourbon image

This hearty pumpkin bread is a sophisticated twist on the traditional version with the addition of bourbon (teetotalers can substitute apple cider), browned butter and cardamom.

Time 1h15m

Yield Two 8-inch loaves

Number Of Ingredients 14

1/2 cup (1 stick) unsalted butter
1/4 cup bourbon (or use water or apple cider)
1 tablespoon vanilla
1 3/4 cups pumpkin purée, homemade or canned (1 15-ounce can)
4 eggs
1/2 cup olive or other oil (such as canola)
2 cups all-purpose flour
1 cup whole wheat flour
1 3/4 cups light brown sugar
1 1/2 teaspoons baking soda
1 teaspoon fine sea salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom

Steps:

  • Heat oven to 350 degrees and arrange a rack in the center. Grease the insides of two 8-inch loaf pans with butter or line with parchment paper.
  • In a large skillet, melt 1/2 cup (1 stick) butter over medium-high heat. Reduce heat to medium and cook until the frothy white milk solids sink to the bottom of the pan and turn a fragrant, nutty brown, 5 to 7 minutes. Brown butter can burn quickly, so watch it carefully. (A tip: You will know your brown butter is almost ready when the frantic sound of bubbling begins to die down, so use your ears as well as your eyes and nose.)
  • In a glass liquid measuring cup, combine bourbon and vanilla. Add water until you reach the 2/3 cup mark. In a large bowl, whisk together bourbon mixture, pumpkin purée, eggs and oil. With a spatula, scrape all the brown butter from the skillet into the pumpkin mixture and stir to combine.
  • In another large bowl, whisk together all-purpose flour, whole wheat flour, brown sugar, baking soda, salt, cinnamon, ginger and cardamom. Pour liquid ingredients into dry ingredients and stir to combine.
  • Divide batter between the two greased loaf pans. Place them on a rimmed baking sheet and transfer to oven. Bake for 50 to 60 minutes or until a tester or toothpick inserted into the center of the loaf comes out clean. Allow bread to cool completely before removing from pan.

BIG BATCH PUMPKIN BREAD WITH FLAVORED BUTTER VARIATIONS

Big Batch Pumpkin Bread With Flavored Butter Variations image

I found this in an old cookbook my mom gave me. It has worked for me every time I have made it, and it makes 3 loaves at a time, so it is the recipe I have stuck with. I make lots of pumpkin bread in the fall, but I give most of it away. This freezes well, it's great for gifts. This also smells heavenly when it is baking. The flavored butters are great on the warm bread.

1 cup butter, softened
1/3 cup honey
2 teaspoons cinnamon

  • Maple Butter.
  • Mix 2 sticks butter and maple syrup together until well blended.
  • Honey/cinnamon Butter.
  • Mix 2 sticks butter and honey and cinnamon together until well blended.

Tips:

  • Soften the butter and cream cheese to room temperature: This will make them easier to mix and will help the bread turn out smooth and creamy.
  • Don't over-mix the batter: Over-mixing can make the bread tough. Mix just until the ingredients are combined.
  • Use a loaf pan that is at least 9x5 inches: This will give the bread plenty of room to rise and will prevent it from overflowing.
  • Bake the bread until a toothpick inserted into the center comes out clean: This will ensure that the bread is cooked through.
  • Let the bread cool completely before slicing: This will help the bread hold its shape and will make it easier to slice.

Conclusion:

Pumpkin butter bread is a delicious and easy-to-make bread that is perfect for fall. It is moist and flavorful, with a sweet and tangy pumpkin butter filling. This bread is sure to be a hit with your family and friends.
