PUMPKIN-CREAM CHEESE BUNDT® CAKE
This is more of a maple-pumpkin bread with a cream cheese center, than it is a true cake; but it's delicious nevertheless. It's not overly sweet and goes great with a cup of coffee. It also seems to taste better the next day, as the spices seem to come out a little more the longer the cake sits.

Tips:
- To ensure the cheesecake filling is smooth and creamy, make sure the cream cheese is at room temperature before mixing. If the cream cheese is too cold, it will be difficult to blend and may result in a lumpy filling.
- Do not overmix the batter. Overmixing can result in a tough, dense cake. Mix the batter just until the ingredients are combined.
- To prevent the cake from sticking to the bundt pan, grease and flour the pan thoroughly. You can also use a baking spray that contains flour.
- Bake the cake according to the recipe instructions. Overbaking can result in a dry, crumbly cake. Use a toothpick to check if the cake is done. Insert the toothpick into the center of the cake. If it comes out with a few moist crumbs attached, the cake is done.
- Allow the cake to cool completely before inverting it onto a serving plate. This will help prevent the cake from breaking.
Conclusion:
This pumpkin bundt cake with cheesecake pecan filling is a delicious and festive dessert that is perfect for any occasion. The combination of pumpkin, cheesecake, and pecans is a classic flavor combination that is sure to please everyone. The cake is moist and flavorful, with a creamy cheesecake filling and a crunchy pecan topping. It's the perfect cake to enjoy on a cold fall or winter day.
