Steps:

  • Place beans and tomatoes in a food processor; cover and process until blended. Set aside., In a Dutch oven, saute onions in oil until tender. Add garlic and cumin; saute 1 minute longer. 2 tablespoons olive oil
1 cup chopped sweet onion
1 garlic clove, minced
1/2 cup white wine
2 cans (15 ounces each) black beans, rinsed and drained
1 can (28 ounces) diced tomatoes, undrained
2 cups vegetable broth
1 can (15 ounces) solid-pack pumpkin
4 teaspoons ground coriander
3 teaspoons ground cumin
3/4 teaspoon salt

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add onion; cook and stir until tender, 4-5 minutes. Add garlic; cook 1 minute longer. Stir in wine. 2 tablespoons extra virgin olive oil (1 turn of the pan)
1 medium onion, finely chopped
3 cups canned vegetable stock, found on soup aisle (I use Vegan Chicken Broth here)
1 (14 1/2 ounce) can diced tomatoes with juice (I use an 8 ounce can tomato sauce here)
1 (15 ounce) can black beans, drained and rinsed
2 (15 ounce) cans pumpkin puree (found often on the baking aisle)
1 cup corn (frozen or canned, drain and rinse if canned)
1 cup heavy cream (I use Unsweetened Silk)
1 tablespoon curry powder
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper (eyeball it in the palm of your hand)
coarse salt
20 sprigs fresh chives, for garnish (chopped or snipped)

Steps:

  • Heat a soup pot over medium heat.
  • Add oil.
  • When oil is hot, add onion.

1 pound black beans, washed and picked over
1 teaspoon salt
3 tablespoons unsalted butter
1 1/2 cups finely chopped onions
3 large cloves garlic, minced
3/4 cup canned tomatoes, drained
1 cup fresh or canned pumpkin puree
6 ounces boiled ham, cut into 1/8-inch cubes
2 1/2 to 3 1/2 cups beef stock
1 tablespoon ground cumin
3 to 4 tablespoons sherry vinegar
1 teaspoon salt, or to taste
Freshly ground black pepper
1/2 to 1 cup medium sherry

Steps:

  • Place beans in a heavy saucepan and cover with boiling water to a level of about two inches above the beans. Add one teaspoon of salt, return to the boil and then simmer, partially covered, for about two to three hours or until the beans are tender. Add more water if beans become dry.
  • Meanwhile, melt the butter in a heavy skillet over medium heat. When it has foamed, stir in the onions and garlic and saute for 8 to 10 minutes or until lightly colored and tender. Set aside.
  • When the beans are tender, stir in the tomatoes and transfer to a processor fitted with a steel chopping blade. With a few on-off motions, process until the beans have started to smooth out, but are still somewhat chunky. This will have to be done in batches. Return the beans and tomatoes to the saucepan and stir in the pumpkin, ham and two-and-a-half cups of stock.
  • Add the sauteed onions and garlic, cumin, vinegar, salt and pepper and stir to mix well. Bring this mixture to the boil and then reduce heat and continue cooking uncovered for another 20 to 25 minutes, stirring occasionally.
  • Stir in the sherry and taste for salt, additional vinegar and other seasonings. If soup is too thick, add stock or sherry. If too thin, continue cooking until thicker.
  • To serve, use a handsome pumpkin and cut off the lid in a scalloped or zigzag pattern. A so-called sugar pumpkin has fewer seeds and heavier meat. Remove the seeds and pull off the strings from them. Toast the seeds on a flat pan in a preheated 400-degree oven in two tablespoons of oil for seven to nine minutes or until they are well colored. Remove from the oven and sprinkle with salt. Fill the pumpkin with soup and use the toasted seeds as croutons.

1 large can Muir Glen fire roasted chopped tomatoes
1 large chopped vidalia or other sweet onion
1/2 cup minced shallot or leeks
heaping Tbsp chopped garlic
1 sm can chopped green chiles or 1/8 cup fresh, choose heat according to your taste.
1 tablespoon chili powder
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 cups 'no chicken' or veggie broth - about half of a box
2 or 3 cans organic pumpkin, no additives
sm amount of olive oil, spray coating, or butter to coat pan
3 tablespoons champagne or other wine vinegar
1/2 cup dry Sherry
Offer sour cream or non-dairy substitute, and shelled, toasted pumpkin seeds (not the ones in shell that are white, but the little brown ones), and hot sauce on table. Note: shelled pumpkin seeds or "pepitos" can be hard to find and are not necessary to enjoy the soup!

Steps:

  • Use small amount of olive oil or other method to coat a 6-quart heavy kettle. Cook onion, shallot, garlic, chili powder, chiles, salt, and pepper over medium heat, stirring, until onion begins to caramelize. While that is cooking, rinse beans and place in large bowl with tomato and its liquid. Add cooked onion mixture to bowl. Use handheld blender to pureé mixture in bowl. Transfer pureé back into soup pot. Stir in broth, pumpkin, and Sherry vinegar until combined. Simmer, uncovered, stirring occasionally. After simmering 15 minutes, add sherry. Simmer another 10 minutes, or until thick enough to coat the back of a spoon. Can adjust thickness with more broth, more pumpkin, or more pureed beans but will need to simmer longer if adding ingredients. Season soup with salt and pepper. Offer sour cream or non-dairy substitute, toasted pumpkin seeds, hot sauce, salt and pepper.

I started out intending to make a Cuban bean and pumpkin stew from one of Madhur Jaffrey's books. I didn't have enough of the ingredients on hand to get the full Cuban flair, so I merged the base of navy beans and pumpkin with another MJ recipe to make this simple yet hearty and satisfying soup. Note, this calls for dried beans, soaking overnight is preferable but you can use the quick method too.

1 1/2 cups dried navy beans
4 tablespoons olive oil
1 onion, diced
4 cloves garlic, minced
2 bay leaves
1/2 teaspoon sea salt (up to 1 tsp depending on your broth)
4 cups fresh pumpkin, chopped (about a 1 inch dice)
4 cups vegetable broth (up to 5 depending on how you like it)
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried sage

Steps:

  • Soak the beans overnight in plenty of water. To use the quick method, rinse the beans and then add them to a large pot with enough water to cover them by about an inch. Bring to a boil, let boil for 5 minutes then turn off the heat and leave covered for an hour. Either method, drain the beans when you're ready to start!
  • Warm the olive oil in a soup pot or dutch oven over medium heat. Add in the diced onion and saute for about 5 minutes. Add in the garlic and continue to cook for another 5 minutes or so.
  • To the cooking onions and garlic, add in the bay leaves, salt and herbs. A note on the herbs: I crush dried whole herbs saved from the garden, you could use fresh, either way chop well. If using ground versions, use much less, around 1/3 tsp each.
  • Once the onions are nicely translucent and lightly browned add in the beans, pumpkin and broth. Adjust seasoning and bring to a boil.
  • Reduce heat to medium low, cover and leave to cook for about 45 minutes, stirring from time to time. Remove the lid for the last 15 minutes of cooking if you want to reduce the amount of broth and have it more stew like.
  • If you used the quick soak method for the beans, it will need to cook slightly longer, about an hour.

1 red bell pepper, chopped
1 onion, chopped
