1-3/4 cups all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon ground ginger
1 egg, lightly beaten
3/4 cup milk
1/4 cup canola oil
1/2 cup thick apple butter
TOPPING:
1/2 cup chopped pecans
3 tablespoons sugar

Steps:

  • In a small bowl, combine the first eight ingredients. Combine egg, milk and oil; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups with a rounded tablespoon of batter. Top each with a rounded teaspoon of apple butter and remaining batter. Combine topping ingredients; sprinkle over muffins. , Bake at 400° for 15-18 minutes. Cool for 10 minutes before removing from pan to a wire rack.

2 1/2 c all-purpose flour
3/4 c sugar
1/2 c light brown sugar
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp cloves
2 large eggs
1 1/4 c canned pumpkin
1/2 c vegetable or canola oil
1 tsp vanilla
2 1/2 c Granny Smith apples, peeled and diced
FOR TOPPING
1/4 c light brown sugar, packed
2 1/2 Tbsp all-purpose flour
1 tsp cinnamon
2 Tbsp unsalted butter, cold and diced

Steps:

  • 1. Preheat the oven to 350 F and spray muffin pan with non-stick cooking spray.
  • 2. In a medium bowl, combine all the dry ingredients including sugars.
  • 3. In a larger bowl, whisk eggs, pumpkin, oil and vanilla extract.
  • 4. Slowly blend the dry ingredients into the wet, mixing until incorporated.
  • 5. Fold in apples.
  • 6. To make the topping, combine ingredients and mix until butter is pea size.
  • 7. Fill greased muffin tins about 7/8 full--almost to the top, and sprinkle with the topping if desired.
  • 8. Bake for about 20-24 minutes or until a toothpick inserted into the muffins comes out clean.

1/2 cup plus 1 teaspoon granulated sugar
7 tablespoons unsalted butter, melted
1 teaspoon plus a pinch of ground cinnamon

2 cups all-purpose flour
1 tablespoon baking powder
1 cup plus 1 1/2 to 21/2 teaspoons whole milk
1/2 cup pure pumpkin puree
1 1/4 teaspoons pure vanilla extract
2 large eggs
1/2 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with nonstick liners. Peel and core the apple and cut into 12 wedges, then slice the wedges crosswise into small triangular pieces. 1 (15 ounce) can pumpkin
3/8 cup canola oil
1/2 cup apple butter or 1/2 cup applesauce
2 teaspoons vanilla extract
2 1/2 cups whole wheat pastry flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
1 cup walnuts, chopped

Steps:

  • Preheat oven to 350°.
  • In a large mixing bowl, combine eggs, honey, pumpkin, oil, apple butter and vanilla; mix well.
  • In another bowl, combine flour with remaining ingredients (except nuts).

1 cup all-purpose flour
3/4 cup whole wheat flour
1/3 cup brown sugar
2 teaspoons baking powder

1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
3/4 cup milk (I used 1%)
1 large egg, slightly beaten
1/4 cup vegetable oil
1 cup pumpkin butter
1/2 teaspoon cinnamon
1/4 cup sugar

Steps:

  • Preheat oven to 400°F.
  • Combine all dry ingredients in a medium bowl.
  • In a second medium bowl, mix together milk, egg, oil, and 1/2 cup pumpkin butter.
  • Make a well in the center of your dry ingredients and pour in milk mixture. Stir together till just moistened. Batter will be slightly lumpy.
  • Fill greased or paper lined muffin tin with half the batter-a little over a tablespoon in each cup. Then top that with a teaspoon of pumpkin butter, then spoon the rest of the batter on top of that, so that the pumpkin butter is in the center.
  • Stir together topping ingredients and sprinkle heavily over muffins.
  • Bake them for 15-18 minutes or until a toothpick through the center comes out clean.
  • Allow to cool for a few minute before removing from pan and place on a wire rack to cool.
