Time 2h

Yield 13

Number Of Ingredients 12

1 ¼ cups warm water
1 cup whole-wheat flour
4 teaspoons active dry yeast
1 cup rye flour
½ cup molasses
⅓ cup unsweetened cocoa powder
1 tablespoon vegetable oil
1 tablespoon instant coffee granules
1 tablespoon caraway seeds
1 ½ teaspoons salt
1 ¼ cups all-purpose flour
1 gallon water

Steps:

  • Combine warm water, whole-wheat flour, and yeast in a small bowl. Let stand until the yeast softens and begins to froth and bubble, about 10 minutes.
  • Mix rye flour, molasses, cocoa powder, vegetable oil, coffee granules, caraway seeds, and salt in a large bowl. Add yeast mixture and all-purpose flour. Turn dough onto a floured surface; knead until smooth and elastic, about 10 minutes. Grease a large bowl.
  • Transfer dough to greased bowl; cover with warm damp towel or plastic wrap. Let rise in a warm area until doubled in size, about 1 hour.
  • Preheat an oven to 450 degrees F (230 degrees C). Grease a baking sheet.
  • Bring water to a boil in a large pot. Divide dough into 13 pieces; shape into balls. Press a hole into the center of each dough ball; pull dough to form a 1-inch hole in the center, keeping dough about 1/2-inch thick. Drop dough circles into boiling water, 3 or 4 at a time. Boil each side for 45 seconds. Remove with a slotted spoon and drain for about 1 minute. Arrange boiled bagels on prepared baking sheet.
  • Bake bagels in the preheated oven until just starting to brown on the bottom, 8 to 10 minutes.

A recipe for that authentic bagel flavor and texture.

Time 3h20m

Yield 6

Number Of Ingredients 12

1 ¼ cups water
4 ½ cups bread flour
3 tablespoons white sugar
1 teaspoon salt
2 tablespoons vegetable oil
1 tablespoon instant yeast
4 quarts water
1 cup honey
2 tablespoons poppy seeds
2 tablespoons sesame seeds
2 tablespoons dried onion flakes
1 tablespoon coarse salt

Steps:

  • Combine 1 1/4 cup water, flour, sugar, 1 teaspoon salt, vegetable oil, and yeast in the mixing bowl of a stand mixer. Mix on low speed using the dough hook until well-developed, about 8 minutes. To ensure the gluten has developed fully, cut off a walnut-sized piece of dough. Flour your fingers, and then stretch the dough: if it tears immediately, the dough needs more kneading. Fully developed dough should form a thin translucent "windowpane."
  • Transfer the dough to a lightly oiled bowl, cover it with plastic wrap and a kitchen towel, and let rise for 2 hours.
  • Punch the dough down, place it on a lightly floured work surface, and use a knife or dough scraper to divide the dough into 6 pieces (or more, for smaller bagels). Roll each piece of dough into a sausage shape about 6 inches long. Join the ends to form a circle. Repeat with the remaining dough, and let the bagels rest for 15 minutes.
  • Preheat oven to 475 degrees F (245 degrees C). Line a baking sheet with parchment paper. Arrange small plates with poppy seeds, sesame seeds, and onion flakes next to the baking sheet.
  • Bring 4 quarts water to a boil in a large pot. Add honey, if desired (see Editor's Note). Boil the bagels, three at a time, until they rise to the surface of the pot, about 1 minute per side. Remove the bagels with a slotted spoon and place them on the parchment-lined baking sheet.
  • Dip the tops of the wet bagels into the toppings and arrange them, seeds up, on the baking sheet. Sprinkle with coarse salt, if desired. Bake in the preheated oven until the bagels begin to brown, 15 to 20 minutes.

Tips:

  • Use a digital scale to measure ingredients. This will ensure accuracy and consistency in your baking.
  • Activate the yeast properly. Proof the yeast in warm water with a little sugar for 5-10 minutes, until it becomes foamy and bubbly. This will ensure that the yeast is active and will help the bagels rise properly.
  • Knead the dough until it is smooth and elastic. This will help to develop the gluten in the dough, which will give the bagels their characteristic chewy texture.
  • Let the dough rise in a warm place until it has doubled in size. This will allow the yeast to work its magic and create light and airy bagels.
  • Shape the bagels carefully. Roll the dough into long ropes and then connect the ends to form a circle. Make sure the bagels are evenly shaped and smooth.
  • Boil the bagels before baking. This will give the bagels their distinctive chewy crust and shiny exterior.
  • Bake the bagels until they are golden brown. The baking time will vary depending on the size of the bagels, but they are typically done after 20-25 minutes.

Conclusion:

Pumpernickel bagels are a delicious and unique bread that can be enjoyed for breakfast, lunch, or dinner. They are a great source of fiber and whole grains, and they can be topped with a variety of sweet or savory ingredients.
