Provided by tinathorn

Number Of Ingredients 5

3 cups puffed millet*
1/4 cup plus 2 TB coconut butter**
1/2 cup honey
4 tsp cocoa powder
1/4 cup semi-sweet chocolate chips (optional)

Steps:

  • Line an 8×8 pan with aluminum foil and spray with cooking spray. Set aside. Pour puffed millet into a large mixing bowl and set aside. In a small saucepan, combine coconut butter, honey, and cocoa powder. Heat over medium, stirring continuously. When it starts to boil, remove from heat. Pour liquid ingredients over puffed millet and stir with a spatula. Add optional chocolate chips (they will melt) and stir well. Pour into pan and press down with a spatula. Take a piece of parchment/wax paper and spread over top. Press down hard with your hands or a hard object (like the side of a glass). Chill for at least 2 hours, uncovered, before cutting into squares. Bars should be stored in the fridge in an airtight container. Notes and Substitutions: *I used Nature's Path puffed millet, purchased at Bulk Barn. Any puffed wheat cereal could also be used if you're not avoiding gluten. **Coconut butter: Empty a bag of shredded, unsweetened coconut into a food processor and blend until it reaches the consistency of peanut butter. Scrape down the sides as needed. This takes anywhere from 5-15 minutes. Store it in the fridge and pop it in the microwave in 20-second intervals before using. It's also a great spread on pancakes. Categories     dessert

Time 40m

Yield 15 treats

Number Of Ingredients 7

6 tablespoons unsalted butter
10 ounces mini marshmallows
1 tablespoon honey
1 teaspoon pure vanilla extract
Pinch kosher salt
4 cups crispy brown rice cereal
4 cups puffed millet

Steps:

  • Line a 9-inch by 13-inch pan with foil, leaving a 2-inch overhang on two sides. Lightly coat the foil and a wooden spoon with cooking spray.
  • Melt the butter in a medium saucepan over medium heat. Add the marshmallows, honey, vanilla and salt. Stir with the prepared wooden spoon until the marshmallows have completely melted, 4 to 5 minutes. Add the rice cereal and puffed millet and stir until the mixture is fully combined. Transfer the mixture to the prepared pan and press into an even layer. Let sit at room temperature until firm, about 20 minutes.
  • Using the overhanging foil as handles, lift the treats out of the pan and invert onto a cutting board. Cut into 15 pieces. The treats can be refrigerated in an airtight container for up to a week. Let sit at room temperature for 30 minutes before serving for a gooier texture.

Tips:

  • Use a large bowl: The millet will expand significantly as it cooks, so make sure you have a large enough bowl to accommodate it.
  • Rinse the millet well: This will help to remove any dirt or debris.
  • Toast the millet before cooking: This will help to enhance its flavor.
  • Use a well-seasoned cast iron skillet: This will help to prevent the millet from sticking.
  • Cook the millet over medium heat: This will help to prevent it from burning.
  • Stir the millet frequently: This will help to ensure that it cooks evenly.
  • Add the sweetener and spices towards the end of cooking: This will help to prevent them from burning.
  • Let the millet cool completely before cutting it into squares: This will help to prevent it from crumbling.

Conclusion:

Puffed millet squares are a delicious and healthy snack or breakfast option. They are easy to make and can be customized to your own liking. With a few simple ingredients and a little bit of time, you can create a tasty and nutritious treat that the whole family will enjoy. These millet squares are a great way to use up leftover millet, and they also make a great addition to a packed lunch or snack box.
