1 tablespoon chopped fresh parsley
4 fresh thyme sprigs or 1 teaspoon dried, crumbled
4 bay leaves
2 tablespoons all purpose-flour
2 14 1/2-ounce cans beef broth

1/2 pound green beans, trimmed, halved
Chopped fresh parsley

Steps:

  • Heat oil in heavy large pot or Dutch oven over high heat. Add beef in batches and brown. Using slotted spoon, transfer beef to bowl. Add onion and garlic to pot and sauté 5 minutes. Add parsley, thyme, bay leaves and flour. Stir 2 minutes. Gradually mix in broth and wine. Return beef to pot and bring mixture to boil. Reduce heat to medium-low and simmer uncovered 45 minutes.
  • Add potatoes and carrots to stew. Simmer until meat and vegetables are tender, stirring occasionally, about 30 minutes. Add green beans and simmer until beans are tender and gravy is slightly thickened, about 10 minutes. Transfer stew to large bowl. Garnish with chopped parsley and serve.

Tips:

  • Choose the right cut of beef: Chuck roast, brisket, and short ribs are all excellent choices for Puerto Rican beef stew. These cuts are tough and flavorful, and they will hold up well to the long cooking time.
  • Brown the beef before stewing: Browning the beef adds flavor and color to the stew. Be sure to brown the beef in batches so that you don't overcrowd the pan and steam the meat.
  • Use a good quality sofrito: Sofrito is a flavorful base made from onions, garlic, peppers, and herbs. It is essential for Puerto Rican beef stew. You can make your own sofrito or use a store-bought variety.
  • Add vegetables to the stew: Vegetables such as potatoes, carrots, and green beans are all good additions to Puerto Rican beef stew. Add the vegetables towards the end of the cooking time so that they don't overcook.
  • Season the stew to taste: Puerto Rican beef stew should be flavorful and well-seasoned. Add salt, pepper, and other spices to taste.

Conclusion:

Puerto Rican beef stew is a hearty, flavorful dish that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste. Be sure to follow the tips above to make the best Puerto Rican beef stew possible.
