I had several bananas that were getting ripe and hated to throw them away. This recipe was perfect for my bananas. It comes from The Cake Mix Doctor by Anne Byrn and it is one of my new favorite desserts. I chose to make 24 cupcakes instead of a cake so it would be easier to serve at work. I also added two ripe bananas to the cake mixture.

vegetable oil, spray for the pan
1 (18 1/4 ounce) package yellow cake mix
8 tablespoons butter, melted
1 cup whole milk
3 large eggs
1 teaspoon pure vanilla extract
1 (5 1/8 ounce) package vanilla instant pudding mix
3 cups whole milk
4 tablespoons butter, cut up
2 teaspoons pure vanilla extract
4 cups sliced bananas (3 large bananas)
1 (12 ounce) container frozen whipped topping, thawed
10 -12 crushed vanilla wafer cookies

Steps:

  • Place a rack in the center of the oven and preheat oven to 350F degrees. Lightly mist a 13 by 9-inch baking pan with vegetable oil spray. Set the pan aside.
  • Place the cake mix, butter, milk, eggs, and vanilla in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed. The batter should look thick and well blended. Pour the batter into the prepared pan, smoothing it out with the rubber spatula. Place the pan in the oven.
  • Bake the cake until it is golden brown and springs back when lightly pressed with your fingers. 30 to 33 minutes. Remove the pan from the oven and place it on a wire rack to cool.
  • Meanwhile, prepare the pudding. Place the pudding mix and milk in a medium saucepan. Fold in the butter and vanilla. Cook over low heat, stirring, until the butter melts, 3 to 4 minutes. Remove the pan from the heat and let it cool for about 5 minutes. Fold in the banana slices.
  • To assemble the cake, spoon the pudding and banana mixture on top of the cooled cake, spreading the mixture out to all edges of the cake with the rubber spatula. 1 box cake mix ( i use yellow)
2 eggs
1/2 c oil (canola or vegetable)
1 tsp pure vanilla extract
1 box instant pudding mix (i use cheesecake)
1 c chocolate chips ( i use 1/2 white and 1/2 semi sweet)
1/4 c nuts, chopped (optional)

Steps:

  • 1. In a large mixing bowl, mix cake mix, pudding mix together.
  • 2. Add eggs and oil and vanilla. Mix well.
  • 3. Once dough is mixed add chips and nuts and mix.
  • 4. Drop by heaping teaspoons on to greased or parchment lined cookie sheets.
  • 5. Bake at 350 for 15 minutes. They make take more or less time depending on how hot your oven is, so keep an eye on them. Bake until just light golden brown. Let rest on cookie sheet for 10 minutes and move them to a wire rack to cool.
  • 6. NOTE: Today I used Funfetti Cake mix vanilla pudding mix and 1/2 cup white chocolate chips and 1/2 cup milk chocolate chips-amazing!

CAKE MIX COOKIES
1 box cake mix (18.25 oz), any flavor
1-2 large eggs
1/2 c vegetable oil or softened butter
2 Tbsp water (if using a chocolate cake mix)
1/2 tsp vanilla extract (or another flavor you like; for unflavored cakes like white or yellow)
12 oz baking chips of your choice (optional)
3/4 c nuts, dried fruit, mini marshmallows, etc. (optional, use your imagination)
CAKE & PUDDING MIX COOKIES #1
1 box cake mix (18.25 oz), any flavor
1 box instant pudding mix (3.4 oz), any flavor
1 c sour cream
2 large eggs
- your choice of mix-ins

1 box cake mix (18.25 oz), any flavor

2 c confectioner's sugar

- citrus zest (optional; since i prefer to use fresh juice, i usually add a bit of the zest as well)

Steps:

  • 1. Preheat oven to 350f.
  • 2. Blend wet ingredients. Add dry mix(es) and blend well, removing any lumps. Add mix-ins if using. (If using pudding mix, note that the dough will be sticky.)
  • 3. Drop cookie mix by teaspoonful, one inch apart, onto greased or lined cookie sheets.
  • 4. Bake for 12 to 15 minutes depending on how crispy you want the cookies. Shorter time for soft, longer time for crispy.
  • 5. Arrange cookies on racks to cool. Frost or glaze if desired. (To make glaze, mix sugar and extract/juice in a bowl. Add water/milk until desired consistency is reached. Add food coloring if desired.) If you are glazing, consider adding colored sugar or sprinkles for a festive touch. (My kids love that part!) Let the cookies dry completely before packaging or storing.
  • 6. **Took my kids shopping to pick out their mix-ins and they had a blast! We will be making our cookies tomorrow and will post pictures then.
