Steps:
- I do not use a mixer with this cake. You will need 3 bowls, 1 large mixing bowl and 2 smaller bowls. Put your chopped prunes in one of the small bowls, cover with the cup of buttermilk and set aside. In the large bowl add together the oil, sugar, and eggs mixing well with a spoon. In the other bowl combine the flour, soda, salt, cinnamon, cloves, allspice, and nutmeg and use a wire whisk to mix well.
- Pour the prunes and milk into the large bowl with the sugar, eggs, and oil. Add the dry ingredients and mix well with a spoon. (I use a wooden spoon). Add vanilla extract and mix. Spray a 9 x 13 cake pan and add the batter. Bake in preheated 325 degree oven for 45 to 50 minutes or until the center of the cake is done. Add the topping recipe below while still warm.
PRUNE QUICK BREAD
I bake this bread weekly and use a variety of fruits available in the junior baby food lines. The recipe came from a friend, who made it for our Christian Mothers' Club. When I'm asked to bake for lunches, bake sales or other benefits, I usually make this bread. -Shirley Kmiotek, Northbridge, Massachusetts

Tips:
- Use ripe prunes: The riper the prunes, the sweeter and more flavorful the bread will be.
- Soak the prunes in hot water: This will help to soften them and make them easier to blend.
- Use a high-quality yogurt: A good yogurt will add richness and flavor to the bread.
- Don't overmix the batter: Overmixing can make the bread tough.
- Bake the bread until a toothpick inserted into the center comes out clean: This will ensure that the bread is cooked through.

This prune yogurt spice loaf is a delicious and healthy snack or breakfast option. It's easy to make and can be tailored to your own preferences. So next time you're looking for a tasty and nutritious treat, give this recipe a try!
