Time 1h10m

Yield 6

Number Of Ingredients 13

2 tablespoons olive oil, divided
2 shallots, chopped
1 clove garlic, minced
1 teaspoon chopped fresh thyme
¼ teaspoon salt
¼ teaspoon ground black pepper
¾ cup soft goat cheese
½ cup shredded mozzarella cheese
½ (8 ounce) package cream cheese
6 figs, chopped
1 tablespoon chopped fresh basil
6 skinless, boneless chicken breast halves
12 large, thin slices prosciutto

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread 1 tablespoon olive oil on a baking sheet.
  • Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir shallots until translucent, about 3 minutes. Stir garlic, thyme, salt, and pepper into shallots; cook and stir until fragrant, about 2 minutes. Transfer shallot mixture to a bowl; stir in goat cheese, mozzarella cheese, cream cheese, figs, and basil until well combined.
  • Pound each chicken breast on a work surface until thin. Spoon about 1/4 cup goat cheese mixture onto the middle of each piece of chicken. Roll chicken around the filling and wrap 2 pieces prosciutto around each chicken roll, covering the opening with 1 layer of prosciutto. Place chicken rolls onto the prepared baking sheet, seam-side down.
  • Bake in the preheated oven for 20 minutes; turn chicken and continue baking until chicken is no longer pink in the center and prosciutto is crisp, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Let chicken stand for 5 minutes before serving.

GRILLED PROSCIUTTO WRAPPED FIGS STUFFED WITH GOAT CHEESE

Grilled Prosciutto Wrapped Figs Stuffed with Goat Cheese image

Provided by Anne Burrell

Categories     appetizer

Time 20m

Yield 4 servings

Number Of Ingredients 9

6 Black Mission figs, cut in 1/2
1/2 cup balsamic vinegar, plus extra for dressing
Crushed red pepper flakes, optional
12 slices prosciutto
1/2 log goat cheese
Extra-virgin olive oil
2 cups baby arugula
1/2 cup Parmigiano-Reggiano, shaved with a vegetable peeler
Kosher salt

Steps:

  • Preheat the grill and brush with a grill brush to remove any excess crud and fat. After brushing, run an oiled towel over the grates to pick up any loosened crud or soot.
  • Drizzle each fig half with vinegar and fill each fig center with goat cheese. Sprinkle a couple flakes of crushed red pepper, if using, on top of the goat cheese and wrap each fig with a slice of prosciutto. Paint the outside of each fig very lightly with olive oil.
  • Put the figs on a cooler spot of the preheated grill. The idea here is that we want to grill the figs gently to cook the fig all the way through but to still get the char on the outside. Grill the figs on all sides so the prosciutto is starting to become crispy and the fig feels soft when squeezed, about 5 to 6 minutes.
  • While the figs are grilling, in a large bowl, toss the arugula with a little extra-virgin olive oil, some balsamic vinegar and the Parmigiano-Reggiano. Taste, and add salt, if needed. Arrange on individual serving plates or a serving platter and top with the figs. Drizzle a couple of drops of balsamic on each fig and serve.
  • Its figgy delicious!

Time 12m

Yield 4 servings

Number Of Ingredients 5

8 Black Mission figs
1/2 cup blue cheese, cut into cubes
8 prosciutto (thinly sliced, cut in half lengthwise)
2 tablespoons extra-virgin olive oil
Sea salt and freshly ground black pepper

  • Preheat grill. You will need medium to high heat for grilling. The key is to crisp the prosciutto quickly and leave the blue cheese just melted with the inner part of the fig cool in temperature.
  • Cut the figs in half and place a piece of blue cheese on each fig half. Wrap the prosciutto around each fig half, covering the cheese. The ends of the prosciutto should overlap.
  • Grill each piece until the prosciutto begins to color and crisp, about 2 minutes on each side. Remove from grill, lightly drizzle with extra virgin olive oil and season with sea salt and pepper. Serve warm.

ROASTED FRESH FIGS STUFFED WITH FRESH RICOTTA AND WRAPPED IN PROSCIUTTO

ROASTED FRESH FIGS STUFFED WITH FRESH RICOTTA AND WRAPPED IN PROSCIUTTO image

Categories     Cheese     Fruit     Appetizer

Yield 4-6 servings

Number Of Ingredients 6

6 fresh figs, top end cut off about 1/3 down
Fresh ricotta, (about 3/4-1 cup)
Red pepper flakes
White balsamic vinegar
Prosciutto slices, divided in thirds lengthwise
Olive oil

Steps:

  • Preheat the broiler. Scoop out as much of inside of each fig as is possible to maintain a nice solid shell. Wrap each fig with a prosciutto strand. Spoon ricotta into middle of each fig, mounding a little. Sprinkle with red pepper flakes to taste. Drizzle with white balsamic vinegar and then a touch of olive oil. Put into oven-proof pan or dish and broil until top gets a little browned and bubbly, about 7-10 minutes.

Tips:

  • Select ripe, soft figs: The riper the figs, the sweeter and more flavorful they will be. Look for figs that are slightly soft to the touch and have no blemishes.
  • Use high-quality prosciutto: The quality of the prosciutto will greatly impact the flavor of your dish. Opt for a prosciutto that is thinly sliced and has a good balance of saltiness and sweetness.
  • Wrap the figs tightly: To ensure that the prosciutto adheres to the figs, wrap them tightly. You can use a toothpick to secure the prosciutto in place.
  • Bake until the prosciutto is crispy: The prosciutto should be crispy and slightly browned around the edges. This will take about 10-15 minutes in a preheated oven.
  • Serve warm or at room temperature: Prosciutto-wrapped figs can be served warm or at room temperature. They are a great appetizer or snack, and can also be served as part of a main course.

Conclusion:

Prosciutto-wrapped figs are a delicious and easy-to-make appetizer or snack. With just a few simple ingredients, you can create a dish that is both elegant and flavorful. Whether you are serving them at a party or enjoying them as a quick snack, prosciutto-wrapped figs are sure to be a hit.
