1/3 cup olive oil
1/2 teaspoon grated lime zest
2 tablespoons lime juice
2 tablespoons white wine vinegar
2 tablespoons honey
1 teaspoon Dijon mustard
1/4 teaspoon salt
3/4 cup fresh cilantro leaves
SALAD:
8 cups fresh arugula or baby spinach (about 5 ounces)
1/2 medium red onion, thinly sliced
1/4 cup thinly sliced fresh mint leaves
1/4 cup thinly sliced fresh basil leaves
8 cups diced honeydew melon
1 package (8 ounces) fresh mozzarella cheese pearls
1/4 pound thinly sliced prosciutto, cut into wide strips

Steps:

2 small heads radicchio, quartered lengthwise
Salt and pepper
1/4 pound sliced prosciutto, cut slices in 1/2 on an angle across the center
Extra-virgin olive oil, for brushing
2 dried figs, finely chopped
1/2 cup balsamic vinegar

  • Preheat a grill pan over medium-high heat.
