1 (5 -6 lb) bone-in standing prime rib roast, trimmed of excess fat
6 large garlic cloves
1/4 cup lightly packed fresh rosemary leaf
1/4 cup lightly packed fresh basil leaf
2 teaspoons kosher salt
2 teaspoons fresh ground black pepper
3 tablespoons Dijon mustard
3 tablespoons extra virgin olive oil
3/4 cup heavy cream
1 garlic clove, thinly sliced
6 ounces blue cheese, crumbled
fresh ground black pepper

Steps:

  • Let the roast stand at room temperature 30-45 minutes before grilling.
  • In a food processor, finely mince the garlic, rosemary, basil, salt, and pepper; add in the mustard and olive oil; process to form a paste.

1/4 teaspoon salt
1/4 teaspoon pepper
