- Heat an electric pressure cooker on the saute mode. When hot, add half of the olive oil. Add half of the pork along with half of the salt, chili powder, black pepper, garlic powder and onion powder. Saute until the meat is very crisp and brown, about 10 minutes. Set the meat aside on a plate. Add the remaining olive oil, meat, salt, chili powder, black pepper, garlic powder and onion powder and cook until the meat is crisp and brown, another 10 minutes.
- Add the first half of the meat back to the pressure cooker. Add the garlic and onions and cook, stirring, for 2 minutes. Pour in the chicken stock. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on manual for 40 minutes.
- After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. After 15 minutes, release the rest of the steam using quick release.
- Remove the lid from the pressure cooker. Remove the pork and onions to a baking sheet. Shred the pork with 2 forks, pour over the barbecue sauce and toss to coat. Serve with the buns and Pickled Jalapenos and Onions.
- If not serving right away, transfer to a 9-by-13-inch disposable aluminum pan, cover with foil and keep warm in the oven at 300 degrees F until ready to serve.
- Put the jalapenos and red onions in a 16-ounce wide-mouth mason jar.
- In a small saucepan, combine the vinegar, sugar, salt and 1 cup water. Bring to a boil, stirring until the sugar and salt are dissolved.

- Prepare the pork loin by rubbing in the Italian Seasoning and crushed garlic. Heat the oil in the pressure cooker and put in a few of the onion pieces to flavor the oil leaving it just long enough to soften slightly, then remove it and set aside. Brown the roast on all sides and both ends. Remove to extra plate so that you can add 2/3rds of the chicken broth scraping the bottom of the pan to get up all the good bits; add the trivet and return the roast, fat side up. Add the onion. Pressure cook for 1 hour; remove from heat and let it the pressure come down on its own.
- Remove the roast and onions to a serving dish and tent with foil to rest for 15 minutes. In the meantime, mix the cold water and corn starch in a mixing cup or small bowl (I like to add a little pepper here). Remove the trivet from pot, add the rest of the chicken broth and bring to a boil. Add the water/corn starch mixture to the pot and remove from heat. This makes a wonderful gravy for the roast.

You can make this spicy pork in a 6- to 8-quart electric pressure cooker if you're in a hurry, or in a slow cooker if you're not. In either case, you'll get tender bits of meat covered in a chile-flavored barbecue sauce that's just slightly sweet. - Set electric pressure cooker to sauté (or use a large skillet). Add pork in batches and sear until browned all over, about 2 minutes per side. Cook until thickened, 1 to 2 minutes. Set sauce aside. (It can be made up to 1 week ahead and stored in the refrigerator.)
- Manually release steam. Let pork cool until you can handle it, then shred it into bite-size pieces. Pork can be made to this point up to 3 days ahead.
- While pork cools, strain liquid from bottom of pot. Pour off fat (or chill liquid, then scoop off solidified fat with a spoon). Reserve.
- Prepare cucumbers: In a small bowl, combine all ingredients except sesame seeds, and let sit, tossing one or twice, for at least 20 minutes. Stir in sesame seeds.
- When ready to serve, heat broiler. Toss pork with sauce and 1 to 2 tablespoons cooking liquid - just enough so pork is evenly coated but not wet or runny. Spread mixture on a rimmed baking sheet, and broil until crisped on top, 2 to 3 minutes; it will char in places, and that's fine.
- Serve pork over rice or on slider rolls, with cucumbers and kimchi, if desired.

- 1. Season your ribs as to your taste. Pressure cooking will intensify the flavors so you do not need to put as much on. I use mesquite seasoning and a little barbecue sauce.
- 2. Add 2 cups of water to bottom of pan and set your steaming basket in next. Lay your seasoned ribs on in a basket that fits your pan for your pressure cooker. Try to have the fat side up if possible and single layered. I have a stainless steel strainer for my steaming basket.

- 4. When the timer goes off, your dinner is almost ready. If you want to wait a while for dinner, the electric pressure cooker will hold your ribs until you are ready. - 5. If you want to you can brown and caramelize the sauce under the broiler or on the barbecue. Your choice. I usually serve with french bread (toasted with garlic) and homemade potato salad.

Steps:
- Cover beans with 2" water in large saucepan and heat to boiling; let boil, uncovered, 2-3 minutes.
- Remove from heat, cover and set aside for at least 1 hour and up to 4 hours.
- Drain soaking water and rinse.
- Cut pork roast into 6 slices, 1 1/2-2" thick; cut slices into halves.
- Sauté pork, onion, and garlic in oil in pressure cooker over medium heat until browned, about 10 minutes.
- Stir in beans and remaining ingredients, except sweet potatoes.
- Close and seal lid; cook 12 minutes at 15 pounds pressure, according to manufacturer's directions.
- Immediately cool cooker under cold water and open lid.
- Add sweet potatoes to pressure cooker.
- Close and seal lid; cook at 15 pounds pressure until sweet potatoes are tender, 2-3 minutes.

Steps:
- Season meat with salt and pepper, if your rub doesn't contain it.
- Rub meat on all sides with your chosen seasoning.
- Let stand under refrigeration for at least 30 minutes, or up to 60 minutes.
- Brown meat in large pan on top of the stove.
- Deglaze the pan with water or wine. Pour into cooker.
- Transfer meat to cooker.
- Add the entire can of chicken broth.
- Put on lid and set to seal.
- Select meat function, and set timer on cooker to 60 minutes.
- Unplug cooker at end of cooking time.
- Open lid when pressure has dropped, as per instruction manual.
- Leave liquid in cooker.
- Remove pork and shred.
- Return pork to cooker.
- Mix well with liquid in cooker.
- Add 1 to 2 20-ounce bottles of premium quality barbecue sauce, depending on consistency desired.
- Mix well.
- Plug cooker in, and set to warm function.
- Put on glass cover and let stand for at least 15 minutes.
- Yield: About 15 to 20 generous sandwiches.
- NOTE: "Country style pork ribs" really aren't ribs at all. They're cut from the pork shoulder and are much more affordable.
