- Add the sausages and chicken to the oil and cook until well browned on all sides.
- While the chicken is cooking, dice the onion.
- Cut the green peppers into 3/4" thick strips.
- Mince the garlic.
- When the chicken and sausages are browned, remove them from the pan and set aside.
- Add the onion, green peppers and garlic to the cooker to cook, stirring often, until they begin to soften, about 4 minutes.
- Add the vinegar and stir up the browned bits from the bottom of the cooker.
- Add the chicken and sausages, tomatoes, basil, fennel, red pepper flakes, salt and pepper to taste.
- Close pressure cooker and bring up to full pressure.
- Reduce heat to stabilize pressure and cook for 10 minutes.
- Release pressure and adjust the seasoning.
Tips:
- Mise en place: Before starting, ensure all ingredients and tools are ready, including a 6 or 8-quart pressure cooker, a cutting board, a sharp knife, measuring cups and spoons, and a wooden spoon or heatproof spatula.
- Choose the right chicken: Use a whole 3-4 pound (1.4-1.8 kg) chicken for a richer flavor. If using chicken breasts or thighs, increase the amount to 3 pounds (1.4 kg).
- Season generously: Don't be shy with the seasoning. Use a combination of garlic, oregano, basil, thyme, rosemary, salt, and pepper to create a flavorful broth.
- Brown the chicken: Before adding the liquid to the pressure cooker, brown the chicken pieces in a little bit of olive oil for extra flavor and color.
- Add vegetables and herbs: Once the chicken is browned, add a variety of vegetables for a nutritious and colorful soup. Common vegetables include carrots, celery, onions, garlic, potatoes, and zucchini. Add fresh herbs like rosemary, thyme, and bay leaves for extra flavor.
- Use a flavorful broth: Instead of water, use a flavorful broth like chicken broth or vegetable broth to enhance the soup's taste.
- Cook at high pressure: Cook the soup at high pressure for the recommended time, typically 15-20 minutes. This cooking method helps retain nutrients and create a rich, flavorful broth.
- Natural pressure release: After cooking, let the pressure cooker naturally release pressure for 10-15 minutes before quick-releasing the remaining pressure. This helps prevent the soup from splattering when opening the lid.
- Adjust seasoning and serve: Once the pressure is released, open the lid and taste the soup. Adjust the seasoning as needed, adding more salt, pepper, or herbs if desired. Serve the soup hot with a side of crusty bread or crackers.
