PRESERVED-FOR-POSTERITY COLE SLAW DRESSING
I'm tired of digging out the recipe card or the cookbook that originally published the basic (now altered) recipe. Here it is, online, so I won't lose it again. I like coleslaw. GOOD coleslaw. This dressing works for me.

Steps:
- Try to follow along here: Whisk together all the ingredients. There. Done. I know, I know -- it's complicated.
- If you like Jane's Krazy Salt or another blended seasoning, feel free to add a hefty sprinkle of it to the dressing. And by the way, if you despise even the suggestion of horseradish, and you're out of buttermilk, you can stick with the first 4 ingredients and you'll still have a very respectable coleslaw dressing that people like.
- Pour it over about 2 lbs of shredded cabbage and carrot. 2 lbs is a LOT of coleslaw for a small family or a couple. I halve the recipe and pour it over 1 bag of preshredded coleslaw mix -- and it's STILL a lot of coleslaw. You're supposed to let it sit and soak for anywhere from 2 hours to overnight and yes, you can do that, but I will confess to scooping out my first serving as soon as I've mixed the stuff together. Caution: the template is demanding that I specify servings and I'm just guessing by saying 16. Pour it over about 2 lbs of shredded cabbage and carrot and see how many people get to try your coleslaw.
- Then you can write a review and complain about my inaccurate servings estimate. ;-).
COLESLAW DRESSING
This homemade Coleslaw Dressing is creamy and so easy to make from scratch with just a handful of ingredients. Toss it with fresh shredded cabbage for the best homemade coleslaw, or use it to elevate the flavor of store-bought coleslaw mix. It's also delicious with broccoli slaw or apple slaw!

Steps:
- In a medium bowl, whisk together all dressing ingredients until well combined.
- Taste the dressing and add more salt and pepper as needed. If you want the dressing sweeter, add a bit more honey. If you want it tangier, add a little more apple cider vinegar.
- Dressing can be used immediately or refrigerated for up to 1 week in an airtight container.
- To make coleslaw, toss about ¾ of the dressing with 6 cups of shredded cabbage and carrots, or a 14 ounce bag of coleslaw mix. Add more dressing as needed until the coleslaw is as creamy as you like it. Serve immediately or refrigerate. Coleslaw is best the day it is mixed with the dressing.

Tips:
- Use a sharp knife or a mandoline to thinly slice the cabbage and onion. This will help the flavors meld together better and make the slaw more crisp and refreshing.
- Be sure to rinse the cabbage thoroughly before slicing. This will remove any dirt or debris that may be present.
- If you don't have a food processor, you can grate the carrots and celery by hand. Just be sure to grate them finely so that they blend well with the other ingredients.
- Use a light hand when adding the mayonnaise and vinegar. You don't want to overpower the other flavors in the slaw.
- Season the slaw to taste with salt and pepper. You may also want to add a pinch of sugar to balance out the flavors.
- Serve the slaw immediately or refrigerate it for later. It will keep for up to 3 days in the refrigerator.
Conclusion:
Cole slaw is a classic side dish that is perfect for any occasion. It is easy to make, delicious, and refreshing. The next time you are looking for a simple and tasty side dish, give this recipe a try. You won't be disappointed!
