Prepared horseradish is a versatile condiment made from grated horseradish root, vinegar, and salt. It has a spicy, pungent flavor and a sharp aroma, making it a popular addition to a variety of dishes, including roast beef, fish, and sandwiches. Its unique flavor and aroma come from compounds called isothiocyanates, which are released when the horseradish root is grated or crushed. Prepared horseradish can be made at home or purchased from the store. Homemade prepared horseradish is typically made with fresh horseradish root, while store-bought varieties may contain preservatives and other ingredients. This article provides three recipes for prepared horseradish: a basic recipe, a creamy recipe, and a beet horseradish recipe. The basic recipe is a simple combination of grated horseradish root, vinegar, and salt. The creamy recipe adds mayonnaise and sour cream for a richer, creamier flavor. The beet horseradish recipe incorporates grated beets for a slightly sweet and earthy flavor. All three recipes are easy to make and can be tailored to your desired level of spiciness.

PREPARED HORSERADISH

Homemade prepared horseradish tastes fresher than store-bought varieties and is a surprisingly versatile condiment that will keep, refrigerated, for about three months. Start with fresh horseradish, which should be chilled to preserve its punch, and a box grater, a hand grinder or a food processor. Horseradish is potent, so make sure to keep the windows open or wear glasses to protect yourself from the fumes when handling the raw ingredient. Whisked into vinaigrettes, drizzled over poached fish or stirred into mayonnaise for a brighter egg salad sandwich, a spoonful of prepared horseradish wakes up whatever you're cooking.

Time 20m

Yield 4 cups

Number Of Ingredients 4

1 pound fresh horseradish root
1/2 cup white vinegar
1 cup cold water, plus more as needed
1 teaspoon kosher salt, or to taste

Steps:

  • Peel the horseradish and cut out any dark veins. Open any nearby windows and use safety glasses to protect your eyes from strong fumes. Cut the horseradish into 3-inch segments. Pulse in a food processor equipped with a steel blade until finely chopped but not mushy. (Alternatively, grate the horseradish finely on a box grater.)
  • Transfer the horseradish to a quart-size jar. Add the vinegar and 1 cup cold water until horseradish is almost covered, adding more water if needed to cover. Stir in the salt, seal and refrigerate until serving. The prepared horseradish will last up to 3 months in the refrigerator.

Time 30m

Yield 48

Number Of Ingredients 4

1 pound horseradish root - peeled, ends trimmed, cut into 1/4-inch dice
¾ cup water, or as needed - divided
⅓ cup distilled white vinegar
1 ½ teaspoons kosher salt

Steps:

  • Place diced horseradish in a food processor; add a splash of cold water. Pulse on and off until mixture begins to blend. Scrape down sides of food processor container (the fumes are very strong, so keep your face away from the bowl and the room well ventilated).
  • Continue blending, adding a bit more water if mixture seems too dry. Process until horseradish is finely ground. Wait 2 minutes before adding the vinegar and salt; supposedly this makes the horseradish hotter. After 2 or 3 minutes, add vinegar and salt. Continue processing until mixture is smooth and creamy or to your desired consistency, adding more water if necessary. Transfer to airtight storage containers. Refrigerate.

Yield Makes 1 1/2 cups

Number Of Ingredients 3

1 pound fresh horseradish root
8 tablespoons white wine vinegar
2 1/2 teaspoons kosher salt

Steps:

  • Peel and coarsely grate 1 pound fresh horseradish root. Combine grated horseradish, 2 tablespoons white wine vinegar, and 2 1/2 teaspoons kosher salt in a food processor; pulse 4 or 5 times, or until the horseradish begins to break down. Add 6 tablespoons more vinegar, a tablespoonful at a time, until mixture forms a coarse paste. Transfer mixture to a jar and refrigerate for up to 1 month.

Tips:

  • When selecting horseradish root, look for firm, plump roots that are free of blemishes and bruises. Fresh horseradish root should be stored in a cool, dark place, such as a refrigerator or root cellar, for up to two weeks.
  • To prepare horseradish root for use, peel it with a sharp knife or vegetable peeler. Be careful not to touch the horseradish root with your bare hands, as it can cause skin irritation.
  • Horseradish root can be grated, minced, or chopped, depending on the desired consistency. Grated horseradish is the most pungent, while minced or chopped horseradish is milder.
  • To make prepared horseradish, mix grated, minced, or chopped horseradish root with vinegar, salt, and sugar. The proportions of each ingredient can be adjusted to taste.
  • Prepared horseradish can be stored in a covered container in the refrigerator for up to two months. It can also be frozen for up to six months.

Conclusion:

Prepared horseradish is a versatile condiment that can be used to add flavor and spice to a variety of dishes. It is a popular ingredient in cocktail sauce, tartar sauce, and remoulade. It can also be used as a marinade for meats and vegetables, or as a spread for sandwiches and burgers. With its pungent flavor and versatility, prepared horseradish is a great addition to any kitchen.
